How to choose fresh and delicious pork bones
- Choose bones that are of moderate size and have little fat.
- Good pork bones usually have a bright color, not pale and without strange odors.
- The temperature of the bones when purchased also affects their freshness; do not choose frozen bones as they may have been stored for a long time and are no longer fresh.

How to prepare Pork Bone Soup Noodles

Prepare the ingredients
Wash the pork bones thoroughly. To eliminate the odor, boil the pork bones with 2 stalks of smashed lemongrass, 1 teaspoon of minced garlic, and 1 teaspoon of minced shallots. Turn the heat to high and cook for 10 minutes.
Remove the pork bones and rinse them again with clean water.
How to clean pork bones thoroughly, without odor:- You can eliminate the odor of pork bones by briefly boiling them with lemongrass and shallots to remove all dirt and remaining debris from the bones.
- You can also add a little white wine to the water when blanching the pork bones. The wine is very effective at eliminating odors.
- Additionally, you can use lemon, vinegar, salt, or ginger to rub over the pork bones and let it sit for about 5 – 10 minutes before rinsing again with water.

Bone Stew
Put the pork bones into an pot, pour in about 1.5 liters of water, 1/2 tablespoon of minced garlic, 1/2 tablespoon of minced shallots, and 1 sliced chili. Turn on high heat and bring to a boil.
Once the water boils, add 4 tablespoons of fish sauce, 2 tablespoons of seasoning powder, 1 tablespoon of salt, and 2 teaspoons of ground pepper. Lower the heat and simmer for 1 hour to soften the bones.
Tip: To save time, you can stew the bones using a pressure cooker. -
Boil the Noodles
Place a pot of water on the stove and bring it to a boil. To soften the noodle dough and reduce sourness, cook the noodles for 30 minutes.
Remove the noodles. To prevent them from sticking together, soak them in cold water for 2 – 3 minutes. Drain well.

Cook the bánh canh
Place a pan on the stove, add 1 tablespoon of cooking oil and heat it up. Add 1/2 tablespoon of minced garlic and 1/2 tablespoon of minced shallots, then sauté until fragrant.
Then, add 2 teaspoons of annatto powder, stir quickly to dissolve the powder, and turn off the heat.
When the bones are tender, add the pre-cooked bánh canh and cook for another 10 minutes. Add the colored oil, adjust the seasoning to taste, and then turn off the heat.
