- Good beef is dark red in color, with yellow fat.
- Choose meat with small, tender fibers; when pressing on the meat with your hand, it should feel non-sticky and should not have a foul smell.
- You should choose beef from heifers as it will be tastier and more tender than beef from bulls.

How to prepare Sukiyaki Hot Pot

Prepare the ingredients
Wash the beef, drain, and then slice it thinly.
Cut the tofu into bite-sized cubes.
Peel the carrot, wash it, and then cut it into flower shapes.
Wash the napa cabbage, drain it, and then cut it into bite-sized pieces.
Wash the chrysanthemum greens, drain, and cut into bite-sized pieces.
Remove the roots of the enoki mushrooms, wash them, and drain.
Wash the shiitake mushrooms and trim the stems.
Wash the green onion and cut it diagonally into about 5cm pieces.
Boil the rice noodles for about 3 – 5 minutes, then remove and rinse with cold water, and drain.

Cooking Hot Pot
First, you sear the beef in the hot pot, then transfer it to a bowl.
Next, add tofu, carrots, napa cabbage, chrysanthemum greens, enoki mushrooms, shiitake mushrooms, green onions, rice vermicelli, and beef into the hot pot one by one. Then drizzle Sukiyaki sauce evenly and cook over medium heat until all ingredients are cooked through.
Crack an egg into a bowl for dipping the meat and tofu.
When the food is cooked, you can enjoy Sukiyaki hot pot. Don’t forget to add udon noodles and “finish” the hot pot broth!
