Ingredients for Vegetarian Boiled Duck and Chicken Eggs Serves 4 – 5 people

Peeled mung beans 40 gr Unsweetened fresh milk 30 ml Gelatin powder Agar 1/2 tablespoon

Vegetarian seasonings: cashews, sugar, seasoning powder, salt

Tools: pot, bowls, spoons, egg molds

How to choose good mung beans:
  • You should choose new mung beans that are not shriveled or infested, with a plump and shiny appearance.
  • Using peeled mung beans will save time in processing. Grinding will help the mixture become smoother.

  • Making mung bean filling

    Place a pan on the stove, add about 2 – 3 tablespoons of cooking oil into the pan, turn on medium heat to heat the oil, then add the annatto seeds and stir evenly to extract a beautiful yellow color. Filter out the oil and discard the seeds.

    Soak mung beans for about 2 – 3 hours until they swell, then cook or steam them until soft. Place the beans in a large bowl, add the prepared annatto oil, season with 1 teaspoon of sugar, 1 teaspoon of seasoning powder, a little salt, mix well, and mash the beans until very smooth.

    Shape the mashed beans into small, even round balls (about 1 teaspoon of beans).

    Tip:

    • The annatto oil will give the eggs a beautiful color and add richness to the eggs.
    • Depending on your preference for richness, you can adjust the amount of oil accordingly.

  • Cook the egg white mixture

    Add 1/2 tablespoon of Agar jelly powder into the pot, add 300ml (enough for about 10 eggs), stir well until dissolved, then add unsweetened fresh milk.

    Place the pot on the stove, turn on medium heat, and cook while stirring continuously until the mixture boils for 1 – 2 minutes, then turn off the heat and remove all the foam that rises to the top.

    Tip:

    • Depending on your preference for crispy egg whites, you can adjust the amount of jelly powder accordingly.
    • You can add the fresh milk into the pot before cooking or add it when it’s almost boiling; both methods work.

  • Shape the vegetarian eggs

    Wait for the jelly mixture to cool slightly, then slowly spoon it into the egg molds, add the shaped mung beans, and pour more jelly mixture to completely cover the mung bean filling.

    Wait for the mixture to cool and place it in the refrigerator for about 1 – 2 hours until completely set, and the dish is ready. Remove from the mold and enjoy!

  • You can serve with a little salt and pepper or vegetarian fish sauce with rice.
