- It’s best to select pieces that feel light in hand, have good elasticity, a fragile feel, and a smooth surface rather than being coarse.
- Avoid choosing pieces of tofu that have turned yellow and have a smell similar to lime, as these may be tofu that has been stored for too long or contains gypsum, which is not good for health.

Preparing Ingredients
Wash the tomatoes, use a knife to make a cross on the bottom of the tomato, then put the tomatoes in boiling water for about 5 minutes on high heat and then remove them. Let the tomatoes cool completely, then peel off the skin and chop finely.
Peel the carrots, wash them, and cut them into small cubes.
For the white tofu, use a spoon or knife to mash it slightly.

Boil the pasta
Place a pot on the stove, add about 1 liter of water along with 1 tablespoon of cooking oil and 1 teaspoon of salt.
Bring the water to a boil, then add the pasta, reduce to medium heat, and when the pasta begins to soften, press all the pasta down into the water with your hands. Stir the pasta well and cook for about 10 – 15 minutes, then turn off the heat.
Drain the pasta in a colander to remove excess water, and you’re done.
Tips for boiling pasta perfectly, fluffy and not sticky:- To make the pasta fluffier and tastier, add cooking oil and salt to the boiling water.
- To check if the pasta is cooked, take a strand out and break a piece; if the inside is still mostly opaque white, then it’s not cooked yet.
- For better-tasting pasta after cooking, aim for the inside of the strand to remain about 1 toothpick’s length of opaque white.

Making tomato sauce
Place a pan on the stove over medium heat, add 2 tablespoons of cooking oil and wait for the oil to heat up, then add 2 tablespoons of minced shallots and sauté until fragrant.
Once the shallots are fragrant, add all the chopped carrots, stir-fry for about 5 minutes, then add the finely chopped tomatoes and stir-fry together.
When the tomato mixture starts to boil, season with 1 teaspoon of vegetarian seasoning, 1/2 teaspoon of monosodium glutamate, 1 tablespoon of sugar, 1 teaspoon of salt, and quickly add 1 cup of filtered water (rice bowl).
Add all the mashed tofu, adjust the seasoning to taste, wait for it to boil again, then you can add the cooked pasta, stir evenly for about 3 minutes, then turn off the heat, add 1/2 teaspoon of ground pepper to complete.
