How to Choose Good Local Chicken
- Choose chickens that have a compact, firm body and small breast. When you press gently on the chicken’s body, the meat should feel firm and quickly return to its original shape when you stop pressing.
- Fresh local chicken has a naturally shiny yellow skin, but it is not uniform; the wings, breast, and back are usually darker in color.
- Avoid buying chickens that have scratches or bruises on their bodies, as these are signs of poor quality.
How to cook Chicken with Pâté

Prepare, marinate and fry the chicken
After buying the chicken, wash it thoroughly, then rub it with a little salt for about 10 minutes to clean it, then rinse with water and let it drain.
Next, cut the chicken into large pieces, add 1 tablespoon of seasoning powder, 1 spoon of ground pepper, 1 teaspoon of monosodium glutamate, half of the minced shallots, and half of the minced garlic into the chicken. Mix well to let the chicken absorb the spices, then marinate the chicken for about 4 hours.
After marinating the chicken, heat a pan on the stove, add 2 tablespoons of cooking oil into the pan. When the oil is hot, add the marinated chicken and fry for about 10 – 15 minutes over medium heat until the chicken is golden.

After buying 1kg of potatoes, peel, wash them clean and use a knife to cut them into bite-sized pieces, then fry them for about 5 minutes.
Peel 1 onion, wash it clean, and cut it into wedges. Peel 100g of shallots and leave them whole. Finally, wash 100g of green pepper and let it drain.

Cook pate
Put 180gr of pate into a clean bowl and mash it into small pieces. Place a pan on the stove, add 2 tablespoons of cooking oil along with the remaining minced garlic and shallots into the pan to fry until fragrant.
When the garlic and shallots are golden and fragrant, add the pate and stir-fry for about 10 minutes over medium heat. Then add 50gr of green pepper into the pan, stir well for another 5 – 7 minutes before turning off the heat.

Cook the broth
Place a pot on the stove, add 2 liters of coconut water into the pot, then add the fried chicken, cooked pate, 50gr of green pepper, and 100gr of whole shallots and cook over medium heat for about 30 minutes.
When the water boils, add all the prepared potatoes into the pot and continue boiling for about 10 – 15 minutes.
Finally, season to taste and add 1 onion, mix well, and then turn off the heat.
