  • About color: you should choose fresh pork pieces that have bright colors; the desirable meat color will be light pink or light red, and the fat should be translucent white with a slight ivory tint.
  • About smell: good meat will have a distinctive aroma that is pleasant, not unpleasant, and free from any fishy or pungent odors.
  • About elasticity: using your hand to press on the meat, if it has good elasticity, after withdrawing your hand, the meat returns to its original shape, with no indentations on the surface, indicating that it is fresh meat.
  • About fat and skin: pigs raised in normal conditions will have a layer of fat about 1.5 – 2 finger lengths thick; you can easily observe the thick layer of fat and skin as the simplest characteristic to identify pork that hasn’t been artificially fattened.

How to choose fresh snakehead fish

  • For live fish: You should choose fish with clear eyes and thick bodies, as it will be easier to scrape off the meat. Choose larger, fatter, and firmer fish that are definitely still alive and swimming vigorously.
  • For pre-processed fish: Pay attention if you see bright red gills, which indicates freshly processed fish, not dark red, and dark blood indicates old fish that has been processed for a long time and is no longer fresh. When selecting, press on the fish’s body; if it feels firm and elastic, not mushy, it is fresh fish.

  • Prepare the ingredients

    Peel the shallots and garlic, then place them in the blender and blend until smooth.

  • Seasoning the filling

    You prepare a small bowl and add the minced meat and minced fish to it. Then you add 1/2 teaspoon of salt, 1 teaspoon of monosodium glutamate, 1 teaspoon of sugar, 1/2 teaspoon of pepper, 2 tablespoons of fish sauce, 1 tablespoon of oyster sauce, 5 tablespoons of cooking oil, and all the minced garlic and shallots.

    Next, you wear plastic gloves before mixing to ensure hygiene and avoid getting your hands sticky. Then you apply some cooking oil to the gloves to prevent sticking and begin mixing thoroughly so that the minced meat and fish absorb the seasoning evenly.

    You mix continuously for about 10 minutes for the fish to become chewy; after mixing, you use plastic wrap to cover it and place it in the refrigerator for about 15 minutes to let the fish absorb the seasoning evenly.

  • Wrapping the spring rolls

    You prepare a cutting board to create a flat surface for wrapping the spring rolls easily, then you lay the wrapper on the board and place the fish filling in the middle of the wrapper, skillfully using your hands to fold the two edges together and then roll it up. You continue to do this until all the filling is used up.

  • Fry the rolls

    Place the pan on the stove and wait until the pan is hot, then add about 200 ml of cooking oil. Wait for the oil to heat up, then add the rolls one by one into the pan. During frying, you should fry over medium heat to avoid burning.

    After you see one side of the roll is golden, turn it over to cook the other side evenly. Once you see the rolls are golden all over, take them out and place them in a bowl. You can use a stainless steel sieve on top of the bowl to let the rolls drain excess oil.
