Ingredients for Chicken Rice For 2 people

Chicken 400 gr Rice 300 gr Water used to wash rice 360 ml Lemon juice 1 tablespoon Bok choy 200 gr Green onions 4 stalks (large stalks) Salt 1 teaspoon White pepper 3 gr Shao Xing wine 2 tablespoons (Shao Xing wine) Cornstarch 1 teaspoon Sesame oil 2 teaspoons Sliced ginger 15 gr Crushed garlic 2 cloves

Tips for choosing good chicken:

  • Choose chicken weighing from 1.5 – 2kg, with firm meat and narrow breast. Because a chicken that is too big will often be tough and less sweet.
  • Chicken meat should be bright pink and when pressed, the meat should be elastic, with thin, smooth skin and a light yellow color.

How to prepare Chicken Rice

  • Prepare the ingredients

    Wash the prepared ingredients thoroughly.

    Separate the green onion tops, then tie 4 stalks of green onions together to form a bundle.

    Use a knife to chop the chicken into bite-sized pieces.

    Cut the bok choy in half lengthwise.

    Gradually add the ingredients into a bowl, including: the onion bundle, chopped chicken, 1 teaspoon of salt, white pepper, 2 tablespoons of Shao Xing wine, and 1 tablespoon of cornstarch, then use chopsticks to mix well.

    Note: You can use clean hands to mix the ingredients thoroughly and especially squeeze the onion bundle to release the juices into the chicken, making it softer and tastier.

    Add 1 teaspoon of sesame oil and mix the mixture again with your hands. After that, let the chicken marinate in the spices for about 30 minutes.

  • Cook the rice

    Plug the rice cooker into the power outlet, add the ingredients into the pot: 1 teaspoon of sesame oil, sliced ginger, crushed garlic, 4 green onion tops, and stir well with a spoon until the ingredients become fragrant.

    Note: If you are not using a rice cooker, you can sauté the ingredients in a non-stick pan on the stove. Then, transfer that mixture into the rice cooker.

    Pour the washed rice into the rice cooker, then use a spoon to stir evenly with the ingredients in the pot for about 1 – 2 minutes.

    Add the rice washing water into the pot, using a spoon to spread the rice so that it is submerged in water. Then, add 1 tablespoon of chicken broth, 1 teaspoon of Shao Xing wine into the pot and mix the mixture well before closing the lid, then turn on the rice cooking mode.

    Note:

    • You can choose to add or not add Shao Xing wine to the rice cooker (depending on your preference). However, the wine will enhance the flavor of the chicken rice dish and it seems that the rice will not have the smell of wine since the wine evaporates during the cooking process. You don’t need to worry!
    • If using a multi-function rice cooker, you can adjust the cooking temperature within 5 minutes, then proceed to step 7 below. If using a regular rice cooker, you just need to press the button for the rice to cook.

    After the rice is cooked, open the lid of the pot, place each piece of chicken and bok choy on top of the rice surface, then press the rice cooking button once more before finishing.

  • Final Product

    With just a simple operation using a rice cooker, you can immediately prepare a super delicious and attractive chicken rice dish. The rice is sticky, not too dry, and has a very appealing aroma, along with the chicken meat cooked just right, with a taste that doesn’t require any additional dipping sauce.

Tips for successfully cooking chicken rice with an electric rice cooker:

  • Cut the chicken into moderate-sized pieces so that it cooks evenly in the rice cooker.
  • Only use a small amount of Shao Xing wine to cook the rice, which helps enhance the rich flavor, avoiding overuse.
  • It is recommended to use chicken broth to make the rice dish more appealing.
  • Using a multi-functional rice cooker is advisable as it allows you to adjust the cooking temperature as desired.
