How to make Fish in Fish Sauce

Prepare the ingredients
First, you clean the fish by removing the scales, cutting off the fins, and thoroughly removing the gills and intestines, then use a knife to make a few cuts on each side.
Next, sprinkle salt on the fish, layering the salt with the fish, and marinate for about 10 to 12 hours. If you want the fish to be saltier, add more salt and marinate longer. After marinating, simply shake off any remaining salt and store for later use.

Cook the fish in fish sauce
You can either fry the fish sauce or stew it according to your family’s preferences. If you choose to stew, cut the fish into 2 to 3 pieces, wash them thoroughly, and place them in a pot. Next, add enough water to cover the fish and bring it to a boil, then discard the water.
Add molasses, cooking oil, caramel, pepper, chili, and orange peel to the pot to marinate with the fish for about 15 to 30 minutes. After that, place the pot on the stove to boil, then pour boiling water over the fish.
