Ground lean meat 200 gr (fresh pork sausage) Ground shoulder pork 250 gr Ground pork fat 50 gr Carrot 1 piece Cucumber 2 pieces Accompanying vegetables a little (herbs/ lettuce/ Vietnamese coriander/…) Chili 1 piece Lemongrass 7 stalks Garlic 3 cloves Red onion 2 pieces Roasted peanuts, crushed 50 gr Five-spice powder 1 teaspoon Tapioca flour 1.5 tablespoons Annatto powder 1/2 tablespoon Annatto color 1/2 teaspoon Chili sauce 1 tablespoon Oyster sauce 1 tablespoon Soy sauce 1.5 tablespoons Fish sauce 2 tablespoons Cooking oil a little Common spices a little (sugar/ seasoning powder/ ground pepper)

  • You should choose fresh pieces of meat that have a bright color, with the fat being a translucent white with a slight ivory hue. Avoid selecting parts of meat with strange colors, pale appearance, or overly dark colors.
  • Good meat will not have any strange smells when you sniff it. Pieces of meat that have unusual, fishy, or spoiled odors are either spoiled or not stored under suitable conditions.
  • When buying, you can press your hand into the piece of meat. If the meat is firm, not too hard and not mushy, and no slimy fluid comes out, then it can be selected for purchase. Conversely, do not buy meat that leaves a fingerprint when you pull your hand away and is slimy.

Ingredients for nem lui dish

How to make Nem Lui

  • Mix the pork paste

    You put 200g of pork paste, 50g of minced pork fat, and 250g of minced shoulder meat into a bowl and mix them together.

    Next, you use a knife to finely chop 2 stalks of lemongrass, and 1/2 of a red onion, then mix them with 1 tablespoon of fish sauce, 1/2 tablespoon of seasoning powder, 1/2 tablespoon of annatto powder, 1 tablespoon of cooking oil, 1 teaspoon of ground pepper, 1/2 tablespoon of sugar, and 1 teaspoon of five-spice powder.

    Then, add the spice mixture into the pork paste bowl and mix well once again. After that, add 1 tablespoon of tapioca starch into the bowl, mix well, and then place it in the refrigerator for 3 hours or in the freezer for about 30 minutes.

  • Shape the nem

    After taking the mixture of pork paste out of the refrigerator, wait about 10 minutes for the meat to soften and then knead it again.

    Next, scoop 2 tablespoons of meat and wrap them around the cut lemongrass stalks so that the meat is evenly wrapped around the lemongrass. You can adjust the amount of meat according to your preference.

    Tip: To prevent the nem from drying out when grilling, remember to apply a little cooking oil to your palms before shaping the nem.

  • Grill the nem

    Before grilling, preheat the oven for about 10 minutes. Then, place the shaped nem tray into the oven, grilling at a temperature of 180 degrees Celsius for about 30 – 40 minutes depending on the type of oven.

    When you see the nem turning golden and slightly charred, turn off the oven and take the nem tray out.

    While waiting for the nem to finish grilling, you can prepare the sweet and sour fish sauce, wash the carrots and cucumbers, and cut them into bite-sized pieces to serve alongside.

  • Make the dipping sauce

    First, you mince 1 stalk of lemongrass, 1 shallot, 3 cloves of garlic, and 1 fresh chili, removing the seeds.

    Then, you heat a pan on the stove, add 1 tablespoon of cooking oil, then add the prepared ingredients and sauté them with 1/2 teaspoon of paprika.

    When the mixture boils, add 5 tablespoons of water, 1 tablespoon of fish sauce, 1 tablespoon of oyster sauce, 1.5 tablespoons of soy sauce, 1 tablespoon of chili sauce, and 1 tablespoon of sugar to the pan, then use chopsticks to stir well and continue boiling for 3 minutes.

    Next, dissolve 2 tablespoons of water with 1 tablespoon of cornstarch, then add it to the pan, stirring well.

    Finally, simmer until the mixture thickens, then add 50g of crushed roasted peanuts, adjust the seasoning to taste, and turn off the heat.

    The grilled nem has a beautiful golden color, a fragrant aroma, retains its softness, and is seasoned just right. It is served with fresh herbs, carrots, cucumbers, and is incredibly appealing when dipped in the dipping sauce.
