How to make Hẹ noodle soup

Cook the broth for Hẹ noodle soup
1 kg of pork bones, you rinse through water 2 – 3 times, then soak the bones in salt water for about 10 minutes. After 10 minutes, remove the bones and rinse again with water to clean.
Next, blanch the bones in boiling water for 4 – 5 minutes to remove all the impurities.
After blanching the bones, you slice 3 shallots thinly and fry them until golden. Then add the pork bones and sauté briefly; when the pork bones become fragrant, proceed to simmer the pork bones.

- When adding the bones to simmer, remember to skim off the foam when the water boils and reduce the heat.
- You can use a pressure cooker to simmer the bones in about 30 minutes to save time.
- You can season with a little seasoning powder or monosodium glutamate in the broth while simmering the pork bones to enhance the flavor.
