How to make Hẹ noodle soup

  • Cook the broth for Hẹ noodle soup

    1 kg of pork bones, you rinse through water 2 – 3 times, then soak the bones in salt water for about 10 minutes. After 10 minutes, remove the bones and rinse again with water to clean.

    Next, blanch the bones in boiling water for 4 – 5 minutes to remove all the impurities.

    After blanching the bones, you slice 3 shallots thinly and fry them until golden. Then add the pork bones and sauté briefly; when the pork bones become fragrant, proceed to simmer the pork bones.
    Pour about 1.2 liters of water into the pot and add the pork bones to start simmering.
    The pork bones should be simmered for 1 hour and 30 minutes to 1 hour and 45 minutes for the best taste.
    When simmering the bones for about 30 minutes, add 2 slices of mackerel, white radish, carrot, and straw mushrooms.
    Once the mackerel is cooked, remove it and shred it into small bite-sized pieces.
    About 5 minutes before turning off the heat, add 4 – 5 green onion tops and then turn off the heat.

    Note:

    • If you don’t have much time, simmer the pork bones for about 45 minutes to be able to use it. However, the broth will not be as flavorful as one simmered for an hour and a half.
    • When adding the bones to simmer, remember to skim off the foam when the water boils and reduce the heat.
    • You can use a pressure cooker to simmer the bones in about 30 minutes to save time.
    • You can season with a little seasoning powder or monosodium glutamate in the broth while simmering the pork bones to enhance the flavor.

  • Prepare other ingredients

    Boil 20 quail eggs, peel them and place them in a separate bowl.

    100 grams of fish cake, cut into bite-sized pieces.

    Chop 350 grams of chives and green onions very finely. The finer you chop, the more fragrant the chives will be and the more visually appealing it will look.

    Blanch the tapioca noodles 1 – 2 times in hot water.

– Observe the outside: Only choose marrow bones that are bright red, not pale, and have no strange smell.

– Bone temperature: Do not choose marrow bones that are cold because they may have been refrigerated; when simmering the broth, it will not taste good.

– Size: You should choose marrow bones about 2 – 3 finger joints in size. Do not choose bones that are too big because large bones may be from sows, which are not tasty. Also, do not choose marrow bones that are too small because they may be from small pigs or sickly, weak pigs.
