Ingredients for Minced Meat and Perilla Porridge Serves 4

White rice 100 gr Sticky rice 20 gr Ground meat 200 gr Carrot 1 piece Potato 1 piece Ginger 1/2 piece Perilla 50 gr Green onion 4 stalks Fish sauce 1 tablespoon Common spices a little (salt/ seasoning powder/ ground pepper)

  • Look for fresh pork that is firm, has high elasticity, and does not leave a dent or stick when pressed with a finger. Fresh pork should have a dry outer layer, bright red or dark red color, and a shiny appearance. The fat should have normal color and firmness.
  • When buying meat, if you see the piece of meat displaying brown, gray, dark red, or light green colors, or it is slimy, it means that the meat has spoiled and should not be purchased. Spoiled meat will have deep dents when pressed and will not return to its normal state, so it should not be chosen.
  • Once you have chosen a piece of fresh pork, you can ask the seller to grind it for you, or you can take it home and grind it yourself using a meat grinder.

How to choose fresh perilla leaves

  • You should choose perilla leaves that have a smooth surface, are intact, and still fresh.
  • It is better to buy perilla leaves that have a darker purple color near the stem, as they will be tastier and more flavorful.
  • Avoid buying perilla leaves that are wilted, yellowing, bruised, or have a foul smell.

  • You should choose carrots that have a bright color, are still firm, have smooth skin, are deep orange, with green tops and leaves, and are not bruised. Carrots with their tops will retain their flavor and stay fresh longer.
  • Among carrots of the same size, choose the ones that are heavier, as these carrots have sufficient moisture and nutrients, making them fresher.
  • Avoid buying carrots with wrinkled skin, soft and mushy texture; if the carrot skin is hard and you can press it with your fingernail to release juice, it means the carrot is still very fresh. If it feels slightly soft or has wrinkles, it means the carrot has lost a lot of water and is not fresh, so it should not be purchased.

  • You should buy potatoes that feel firm in your hand, are heavy, have smooth, intact skin, and do not have spots, rot, black eyes on the skin, or any signs of decay with liquid oozing out.

  • Roast rice and cook porridge

    Wash the glutinous rice and regular rice with water about 1 – 2 times and then let it drain.

    After that, place a pot on the stove, wait for the pot to heat up, then add the rice and glutinous rice and roast on low heat for about 7 minutes until the rice turns a creamy white color.

    Next, add 1.5 liters of boiling filtered water to the pot and simmer the porridge for 25 – 30 minutes over medium heat.

  • Marinate the meat

    You put 200g of ground meat into a bowl, marinate the meat with 1/2 tablespoon of seasoning, 1/4 tablespoon of salt, and 1/4 tablespoon of ground pepper, use a spoon to mix well and let it marinate for 15 minutes for the meat to absorb the spices.

  • Prepare the vegetables

    For the carrots and potatoes you bought, use a knife to peel them clean and then cut them into small dice.

    Wash the perilla leaves and then chop them finely. Chop the green onions finely.

    After the porridge has expanded and softened, add 1 carrot and 1 potato diced into small cubes and cook for an additional 10 minutes over medium heat until the vegetables are cooked.
