Ingredients for Crab Soup Serves 4

Crab meat 150 gr Bones for making broth 1 kg Corn 1 ear Chicken breast 100 gr Shiitake mushrooms 50 gr Snow mushrooms 50 gr Chicken eggs 2 Tapioca starch 50 gr Quail eggs, boiled and peeled 10 Century egg, peeled 1 Cilantro 10 gr Seasoning (salt/pepper/sesame oil) 20 gr

How to Cook Crab Soup

  • Cook the broth with bone

    Boil the bones, then wash them thoroughly to remove dirt. Simmer the bones for about 1 hour, then strain to get 1 liter of broth for the soup.

    Chicken: boil until cooked and shred.

    Sweet corn: wash clean and separate the kernels.

    Shiitake mushrooms, snow mushrooms soaked until soft, cut into strips.

    Mix tapioca flour with 30 ml of water.

  • Cooking the soup

    Bring the broth to a boil, then add the sweet corn, shredded chicken, and shiitake mushrooms until cooked, then add 2 spoons of salt, seasoning to taste.

    Then add the crab meat and snow mushrooms.

    Next, gradually add the tapioca flour, being careful to pour slowly, stopping when the soup thickens. Do not pour all at once as it may become too thick.

    Finally, slowly pour in the beaten eggs while stirring in one direction to create a nice pattern. You can filter and only use the egg whites for a prettier white pattern.

    Cook until the soup turns clear, add quail eggs, then turn off the heat, scoop into a bowl, sprinkle with cilantro, add preserved eggs on top, pepper, and chili to taste, then enjoy.

    Crab soup with its eye-catching colors from crab and various beans, accompanied by vegetables, is especially rich in nutrients and high in calcium, which is very good for health. This dish is best enjoyed on cold days and can also be served as an appetizer at parties.
