- For pigeons, you should buy the ones that have just been weaned, as they are the tastiest. These pigeons are about 15 days old, with soft, thick, and fatty meat, containing the highest nutrition.
- To choose a newly weaned pigeon, look for those that are about the size of a fist, with sparse down feathers, only the wings and back feathers are a bit thicker.
- When buying pigeons, you can press the area under the wing; if the meat feels thick, it is fresh and delicious. If you press on the breast, it should feel soft.
- If buying prepared pigeons, you should avoid those with pale green skin and choose those with rosy skin!
How to choose good, firm mung beans
- When selecting mung beans, you should choose those that are bright green, firm, without any signs of pests, and have a characteristic fragrant smell.

How to make Pigeon Porridge with Green Beans and Lotus Seeds

Preparing the pigeon
After purchasing the pigeon, first clean the feathers and internal organs, then wash thoroughly with water.
Next, to eliminate the fishy smell of the pigeon, use white wine mixed with a few slices of fresh ginger to rub all over the body of the pigeon, and finally rinse it clean with water and let it drain.
Use scissors to cut off the head and feet of the pigeon. Continue to cut the body of the pigeon in half and then cut at the joints into small pieces.
Wash the pigeon thoroughly with water several times and then let it drain.

Marinate the minced meat with similar spices in another bowl for flavor absorption.

Stir-fry the pigeon and minced meat
Add 5 tablespoons of cooking oil to a pan and heat it, then add 1 chopped shallot and fry until golden and fragrant, then remove the oil and the fried shallot.
Using an old pan, add 1 tablespoon of cooking oil (using the oil left from frying the shallots), add the remaining chopped shallot and fry until fragrant, then add the pigeon and stir-fry on high heat until cooked for about 10 minutes, then add the minced meat and stir-fry for another 3 – 4 minutes before turning off the stove.

Cook the porridge
Put the cleaned mung beans into the rice and add another 1.3 liters of water to the pot and bring to a boil. When the water boils, add the lotus seeds, stir well, and cook until the lotus seeds are soft and the rice has expanded.
Then, add the pigeon and the stir-fried minced meat and cook on low heat. Add 1 teaspoon of seasoning powder, 1/2 teaspoon of monosodium glutamate, 1/2 teaspoon of salt, and 1 teaspoon of sugar to the pot, stir well, cook over medium heat for another 5 minutes, adjust the seasoning to taste, then turn off the heat.
Sprinkle chopped green onions and cilantro into the pot, stir well, and add fried onions and a little ground pepper on top to finish.
