How to choose good pork bone:
- Check the aroma and condition of the bones.
- Good bones should be fresh in color, not pale, have no strange smell, and should not be cold, about 2 – 3 finger joints in size.
- Choose bones of medium size. Avoid choosing small ones as they may come from sick pigs that were slaughtered early for sale.

Prepare the pork bones
The pork bones are washed clean, and excess meat around the bones is trimmed off. They are blanched in boiling water to remove impurities.
After blanching the bones in boiling water, remove them and rinse in cold water to eliminate any dirt on the outside and inside, while also removing the unpleasant odor of the bones.

Cook the broth
Roast ginger and onion. Scrape off the outer skin and wash them clean.
Put the pork bones into a pot with about 1 liter of water. Turn on the stove and simmer the bones for about 1 hour. Add the roasted onion and ginger to enhance the flavor of the broth. Add a little cinnamon and star anise for aroma. Season with a bit of seasoning powder.

Blanch the pho noodles
Put the pho noodles into a large bowl, pour boiling water over them to separate the noodles and prevent them from sticking. Then transfer to a smaller bowl to drain.
How to blanch pho noodles so they are chewy and not mushy: Place the pho in a pot of boiling water, use chopsticks to stir so that the noodles are separated and do not stick together, then drain and rinse briefly with cold water to ensure they are well drained.
