Peel the white radish, wash it clean, and cut it into pieces about 5cm long.
Wash the lemongrass, cut it into 8 – 10cm long pieces, and crush it. Tie the lemongrass leaves together into a bundle.
Lightly roast the ginger and shallots over fire until fragrant. Then scrape off the skin and wash them clean.
