How to choose fresh and delicious black apple snails correctly

For snails with intact shells

  • Fresh black apple snails will have shiny black shells, without stripes, and especially, the shells are hard. The bottom of the snail is protruding and evenly spiraled.
  • When buying, you need to pay close attention to avoid purchasing dead snails. When you gently touch the snail, if it retracts and closes its shell, then it is still alive and will be fresh.
  • You should never buy if you see the snail’s shell deeply retracted or when dropped into water, the snail floats up and has a foul smell.

For processed snail meat

  • If you want to buy processed snail meat, you should consider purchasing from reputable places to ensure the snails are fresh and safe.
  • Buy whole snail meat, with the intestines and snail meat tightly attached and firm.
  • Absolutely do not buy if you notice the snails have unusual colors, are mushy or have a rotten smell.

  • Prepare the black apple snails

    After buying the black apple snails, you separate the meat and wash it clean. Then, rub the snail meat with a little salt and vinegar to remove the fishy smell.

    If the snails are large, you can cut them in half, otherwise, keep them whole.

  • Prepare other ingredients

    The spare ribs, after being washed, should be cut into bite-sized pieces. Then, blanch them briefly in boiling water and rinse with clean water 2 – 3 times.

    For the tofu, use a knife to cut it into bite-sized pieces. Add 3 tablespoons of cooking oil to a pan and then fry the tofu until golden brown.

    Pork fat, after being washed, should be cut into small pieces, then fried over low heat to render the lard.

    Wash the starfruit, then cut it into bite-sized slices. The tomatoes, after being purchased, should be washed and cut into wedges. The cilantro and pepper leaf should be washed and chopped finely.

    Peel 2 cloves of garlic and 3 shallots, then mince them. The remaining 5 shallots should be peeled, sliced lengthwise, and then sautéed until golden.

  • Marinate and stir-fry snails

    After cleaning, you marinate the snails with 1 teaspoon of salt, 2/3 of the shallots, and minced garlic for about 5 minutes.

    Next, you heat 1 tablespoon of cooking oil, then add the snails and stir-fry over medium heat for about 10 minutes.

    First, you place a pot on the gas stove, then add 1 tablespoon of cooking oil to the pot. After the oil is hot, add the remaining shallots and minced garlic to sauté until fragrant.

    Next, add the tomatoes and starfruit and stir-fry for about 2 minutes, then add 1.5 liters of water and the ribs to simmer on low heat.

    After about 20 – 30 minutes of simmering the broth, add the fried pork fat and prepared tofu into the pot to bring the broth back to a boil.

    Finally, add some cilantro and pepper leaves, then season with salt and sugar to taste, then turn off the heat.

    Finally, you just need to arrange the noodles in a bowl, ladle the broth containing ribs, pork fat, tofu, starfruit, and tomatoes, then scoop a spoonful of snails and sprinkle some fried shallots on top to enjoy immediately.

  • For this noodle dish, you must choose the right bitter clams. Bitter clams have a round body, about the size of a fingertip or larger, dark brown color, pointed tail, and spiral shell. Bitter clams usually live in ponds, lakes, rivers, and canals in the Mekong Delta.
  • Choose clams with a body that fits snugly in the shell or can quickly burrow back into their shell when touched.
  • Fresh clams should close quickly when touched on the outside of the shell.
  • Do not buy clams that have their body deep inside the shell, forming a soft mass, as these are dead or spoiled clams.

How to choose fresh chicken leg mushrooms

  • For chicken leg mushrooms, you should choose those with bright colors and a length of 12 – 15 cm. Because if they are too long, the inside of the mushroom will be hollow and lacking in flavor.

    Soak the snails in diluted salted water with a few slices of chili for about 1-2 hours to help the snails expel all the dirt and sand, then rinse thoroughly with water several times. Next, take the snail meat out and discard the shells.

  • Stir-fried snail meat

    Place a pan on the stove, add 2 tablespoons of cooking oil, and turn on high heat to heat the oil quickly. Next, add all the snail meat, stir-fry until it firms up, then add 1 tablespoon of fish sauce, and stir well to combine the seasoning and snail meat.

  • Making the broth

    Place the pot of water on the stove, turn on the high heat, then add the ribs, half of the tomatoes, and the chicken mushrooms, and cook for about 20 minutes, covering the pot to make the water boil faster and extract the sweetness from the ribs and mushrooms.

    Put a frying pan with oil on the stove, turn on medium heat to heat the oil quickly. When the oil is hot, add the purple onion and stir-fry until fragrant, then add the remaining tomatoes, stir-frying for about 15 minutes. When the tomatoes are soft, use a spoon to mash them up.

    Add the mashed tomatoes into the broth pot, stir well and wait for it to boil again. Finally, add 2 tablespoons of vinegar, 2 tablespoons of sugar, 1/2 tablespoon of fish sauce, 1 tablespoon of seasoning powder, stir well, season to taste, and then turn off the heat.

      Then, place a pot on the stove, add 200ml of water along with the snails to boil from when the water is still cold over high heat. Once the water boils, reduce to medium heat and continue boiling the snails for about 5 minutes until they are cooked.

      After the snails are cooked, remove them and place them in a bowl of cold water to cool slightly, then use a toothpick or sharp stick to extract the snail meat. Keep the snail broth to make broth.

    • Prepare the other ingredients and grill the ribs

      Next, you wash the ribs thoroughly, soak them in diluted salt water for about 5 minutes to eliminate odors. Then, rinse again with water and cut the ribs into bite-sized pieces.

      Place the ribs in a colander and let them drain until dry, then evenly arrange the ribs in the air fryer, grilling the ribs at 180 degrees Celsius for about 10 minutes until the surface is set and slightly golden.

      After washing the tomatoes, cut off the stem and dice them finely. For the shallots and green onions, cut off the roots, wash them clean, and chop them finely.

      Mix 1 tablespoon of fermented rice with 20ml of water, stirring well.

      After grilling the ribs in the air fryer, place the ribs along with 1 liter of water into the pressure cooker, cover the lid, and simmer the ribs for about 15 minutes.

      When the ribs are tender, remove them to a bowl, add the water from boiling the snails into the rib broth, stir well, and bring to a boil before reducing to the lowest heat.

      Meanwhile, add 2 tablespoons of cooking oil to the pan, heat until the oil is hot, then add 1/3 of the minced shallots and fry until fragrant and golden.

      At this point, add the diced tomatoes, fermented rice water, and 2 tablespoons of seasoning powder, stir-fry until the tomatoes are soft. You can use chopsticks to mash the tomatoes a bit, making them mushy.

      When the tomatoes are soft, add the entire stir-fried mixture into the broth pot, season to taste, then increase the heat, and cook until the broth is gently boiling, then reduce to low heat.

      You continue to add 2 tablespoons of cooking oil along with all the remaining chopped shallots into the pan, sauté until the shallots are golden and fragrant.

      At this point, add the snails, ribs along with 1 tablespoon of satay, 1 teaspoon of ground pepper, and 1 tablespoon of seasoning powder.

      Stir-fry on high heat for about 10 minutes, until all ingredients absorb the spices and become aromatic, then turn off the heat.
