  • Prepare the ingredients

    First, dilute water with 1/2 teaspoon of salt, then soak 200g of green beans for 1 – 2 hours until soft, then rinse with water.

    Next, mix 100g of cassava flour with 300ml of filtered water.

    Then, mix 1 packet of coconut milk with 100ml of hot water and stir well.

    Finally, wash the pandan leaves and let them drain.

    Tip: Instead of using packaged coconut milk powder, you can also buy ready-made coconut milk for cooking.

How to make Tapioca Pearls from Tapioca Starch

  • Mix the flour

    Put the tapioca starch into a bowl, then gradually add the agar powder and sugar. Mix everything well together.

    Slowly add boiling water into the flour mixture and gently stir with a flat whisk. Wait for the mixture to cool slightly, then knead by hand until the dough becomes smooth and elastic.

    After that, shape the dough into small balls for easy consumption. To prevent the tapioca pearls from sticking together, after rolling them, coat the pearls in dry tapioca starch once more.

  • Boiling tapioca pearls

    Place a pot on the stove and add about 1 – 1.5 liters of water, then bring to a boil. If the water level is low or evaporates during cooking, you can add more water!

    Add the tapioca pearls to the boiling pot of water, continuously stirring with chopsticks so the pearls do not stick to the bottom of the pot.

    When the tapioca pearls start to float, gently stir with chopsticks and cook for another 10 – 15 minutes. When the pearls begin to sink, turn off the heat, cover, and let them sit for an additional 15 – 20 minutes!

    After that, remove the tapioca pearls and immediately soak them in cold water for about 5 – 7 minutes to make them firmer and chewier. If you like them sweet, you can add sugar and soak it together with the tapioca pearls!

How to Make Pandan Leaf Cassava Pudding

  • Make Pandan Leaf Extract

    Wash the pandan leaves, chop them finely after removing the roots. Then put them in the blender with 100ml of water and blend until smooth.

    Once the mixture is smooth, filter the extract using a clean cloth or strainer.

    Tip:

    • To achieve a beautiful green color and reduce bitterness, soak the pandan leaves in warm water for about 5 – 10 minutes before blending.
    • If you don’t have a blender, you can crush the pandan leaves and mix them with water, then filter it again.

    Put a pot on the stove, add 700ml of water and 100gr of rock sugar, then bring to a boil. Next, mix 100gr of cassava flour with 200ml of cold water, stirring well until the flour is completely dissolved.

    After the water boils and the rock sugar dissolves, you gradually add the mixed cassava flour water. Stir well until the flour dissolves, continue cooking for about 3 minutes until the mixture thickens and turns opaque white.
