How to choose ingredients
Straw mushrooms:
- Choose straw mushrooms that are round, still in bud, and do not select those that have fully opened. Black straw mushrooms are tastier than white ones.
- If the straw mushrooms have a slightly moldy smell, scrape off the mold and soak them in a basin of water mixed with salt for about 15 minutes, and the straw mushrooms will no longer have an unpleasant smell.
Oyster mushrooms:
- Choose larger, firmer, and tougher stems as they are more delicious than smaller stems.
- Oyster mushrooms with small, wide stems will be less tasty, not chewy, and not as sweet as those with larger stems.
Tip:
You can add shiitake mushrooms and other types of mushrooms if you like.

How to Make Vegetarian Green Pepper Hotpot

Prepare the Ingredients
Wash and clean all accompanying vegetables and green pepper, then let them drain.
Remove the stems from the types of mushrooms, wash them, let them drain, and then chop them finely. Cut the straw mushrooms in half or quarters to bite size. Slice the king oyster mushrooms diagonally to bite size. Leave the oyster mushrooms whole, and trim the stems from the snow mushrooms.
Set aside 2-3 sprigs of green pepper for decoration. Blend the remaining peppers with a little water until finely ground.

Cook the Hotpot
Place a pot on the stove, turn on the medium heat, and when the oil is hot, add chopped scallions, then stir-fry the mushrooms.
Season: 1 tablespoon of fish sauce, 1 tablespoon of seasoning powder, 1 tablespoon of sugar, and the blended green pepper. Stir well for about 2-3 minutes until the mushrooms are slightly cooked.
Add about 2 liters of boiling water and bring to a boil. Then transfer to a dedicated hotpot pot and enjoy with noodles or rice vermicelli, along with fresh vegetables right away.
