How to choose fresh water spinach
- You should choose water spinach with slender, long stems, about the size of a chopstick, and small tips.
- Fresh water spinach has banana green color, with light green leaves. When you snap the tip, you can feel the crispness and see sap flowing out, which indicates it is freshly harvested.
- Do not buy bunches of spinach with drooping leaves, bruises, eaten by pests, or overly dark green color.
How to choose fresh, quality chicken eggs
- For industrial chicken eggs, you should choose those with dark brown shells, without cracks or black spots. For garden chicken eggs, the shells are usually lighter yellow.
- You should select eggs that feel rough and a bit bumpy when touched; these are fresh eggs from newly laid hens.
- Hold the egg close to your ear and shake it gently; if you hear a loud movement inside, the egg may be spoiled. Conversely, eggs that do not make noise when shaken are fresh.
- Shine a light through the egg; fresh eggs will show a clear egg white, with a light orange or pink yolk that appears centered.

Prepare the Ingredients
After buying water spinach, you should remove any wilted leaves, then cut it into pieces about 2 finger joints long, wash it thoroughly several times, and then place the water spinach in a basket to drain.
Peel the garlic and then use a knife to chop it finely.
Next, crack the eggs into a bowl and add a mixture of seasoning: 1/2 teaspoon of seasoning powder, 1/2 teaspoon of ground pepper, then use a chopsticks to whisk the eggs until well combined.

Stir-fried Water Spinach with Eggs
You place a pan on the stove, then add 1 tablespoon of cooking oil, wait for the oil to heat up, then add minced garlic to fry until fragrant over medium heat.
Once the garlic is golden and fragrant, add the water spinach and stir-fry over high heat until the water spinach wilts, then season with 1/2 teaspoon of sugar, 1/2 teaspoon of monosodium glutamate, 1/2 teaspoon of ground pepper, and 1/2 teaspoon of seasoning powder.
Next, add a little water and continue to stir well for about 5 minutes. When the water spinach is just cooked, add the eggs to the pan, stirring continuously to prevent the eggs from clumping.
Finally, adjust the seasoning to taste, then turn off the heat and transfer the stir-fried water spinach with eggs to a plate.
