Prepare beef, shrimp, squid
Wash the beef with clean water several times, then drain and thinly slice it using a knife.
Wash the shrimp, then cut off the head and tail, peel the shrimp, and remove the black vein on the back of the shrimp.
For the squid, remove the internal organs, spine, and beak, then wash it clean with water, and slice the body into rings about 1/2 finger thick.
Wash the beef bones with water, then blanch them in boiling water for cleanliness and let them drain.

Pick the wilting parts off the bok choy and watercress. Then soak in salt water, wash thoroughly, and let it drain.
Trim the stems off the straw mushrooms and oyster mushrooms, soak them in diluted salt water, then rinse well. Slice the oyster mushrooms and leave the straw mushrooms whole.
Peel the ginger, slice it. Wash the lime leaves and let them drain. Cut off the roots of the onion and peel it. Remove the old outer leaves and stems of the lemongrass, then wash thoroughly with water.
