How to choose good pork bones
- Good pork bones usually have a fresh color, not pale, and no strange smell.

Tips for choosing good squid: The two simplest ways to choose fresh squid are to look at the color on the squid’s body and its firmness.
- The first way is to observe the color on the squid’s body; if the brown part is dark purple and the white part looks cloudy like milk, then it is fresh and good squid.
- For the second way, you can check the freshness by pressing on the squid’s body; if you feel the flesh is firm and elastic, then it is fresh squid. Conversely, if the squid body is soft and mushy, and pressing it leaves a dent and is slow to bounce back, then it is not fresh squid.
How to prepare Seafood Noodles

Make the broth
Clean the pork tail bones, place them in a clean basin, and add about 1 teaspoon of salt. Then pour boiling water over them and blanch for 2 to 3 minutes to clean the bones, removing any blood and odor. After that, rinse them thoroughly with water and let them drain.
Place a pot on the stove, add the pork tail bones along with 2 to 3 liters of water and 1 tablespoon of salt, add 70g of chopped celery, 1 shallot, and simmer on low heat for 1 hour. Skim off any foam when the water boils.
Wash 20g of dried shrimp, then soak in warm water for about 10 minutes to soften the shrimp.
Heat a pan with 1 tablespoon of cooking oil, add 10g of green onions and the shrimp, sauté until the shrimp become translucent, then add the dried shrimp and sautéed onions into the broth, cooking the broth for an additional 20 minutes with half a tablespoon of seasoning.

Preprocessing seafood
Preprocessing shrimp:
You should soak the shrimp in a bit of salt, then rinse clean and cut off the shrimp’s head.
Next, peel the shell and use a knife to make a slit along the back or use a toothpick to remove the black vein on the shrimp’s back. Finally, rinse the shrimp one more time to clean before cooking.
Preprocessing squid:
Cut across the body and remove the internal organs that are still attached inside the squid’s body. Use a knife to lightly score the outside of the squid’s head to peel off the skin. Finally, rinse thoroughly with white wine, ginger, vinegar, or lemon to completely eliminate the fishy smell.
Use a knife to score a checkerboard pattern on the squid’s body (not too deep) to help the squid cook faster and look more appealing.
Continue by placing the cut squid into a bowl and adding 1 teaspoon of sugar, then massage until the squid releases foam. After that, rinse the squid again with water and let it drain.

Prepare other ingredients
Wash the carrots, peel them, and then add them to the broth pot. Chop the cilantro finely.
Heat a pan, add the squid, shrimp, and green onions, and stir-fry until the shrimp are cooked, then let them cool and peel the shrimp.
Slice the chili and garlic thinly. Then, place the chili and garlic in a small bowl with 1 tablespoon of sugar, 1/4 teaspoon of salt, and 1 tablespoon of vinegar, and soak for 60 minutes.
Add sliced shallots and minced garlic to fry until crispy and golden fragrant, reserving the fried oil to mix with the noodles.
For the char siu, you can buy it outside or make it at home. Then slice it thinly.

Blanching the noodles
Bring a pot of boiling water, to prevent the noodles from sticking together, use half a kilogram of noodles for every 4 liters of water.
When the water is boiling, add the noodles and blanch for about 2 – 3 minutes depending on the type of noodles (refer to the packaging instructions according to the type of noodles).
Tips for delicious blanching noodles, not mushy:
- When the water is boiling, reduce the heat to medium or low and blanch the noodles until they are almost cooked; do not overcook them or they will become mushy and unappetizing.
- During the blanching process, you should add a little salt to the water to enhance the flavor of the noodles.
- After the noodles are cooked, drain them in a colander, then add a few drops of olive oil or cooking oil so they don’t stick together.

Completion
Put the noodles in a bowl and mix with a bit of fried garlic oil and fried onions. Add sliced carrots, shrimp, squid, and char siu to the bowl, and pour in the broth along with the briefly blanched bean sprouts. Sprinkle with pepper, green onions, cilantro, and fried onions on top.
