Pork 300 gr Shrimp 300 gr Quail eggs 20 eggs Chicken eggs 2 eggs Wood ear mushrooms 50 gr Peas 100 gr Corn 1 ear Pumpkin 300 gr Carrot 1 piece Green onions a little Wheat starch 3 tablespoons (can be replaced with tapioca flour) Common spices a little (Salt/ Sugar/ Pepper/ Seasoning/ MSG)

How to choose good pork

  • Fresh pork will have high elasticity and firmness. You can press the meat with your hand to check; if it does not leave a dent and does not stick to your hand, then it is good meat. Conversely, pieces of spoiled meat, when pressed, will not return to their normal state immediately.
  • Good meat will have a bright red or dark red color, shiny, and a dry outer layer.
  • If you see meat with gray, brown, dark red, or pale green color, or it is slimy, do not buy it. Because this is a sign that the meat has spoiled.
  • Additionally, pork raised with lean meat enhancers will have a dark color, red spots on the skin, and a stronger fishy smell compared to clean pork.

How to choose fresh and delicious shrimp

  • Fresh good shrimp will have transparent legs that are tightly attached to the shrimp body. Do not buy shrimp with discolored legs or that are loose.
  • Make sure to buy shrimp with slightly curved bodies, firm flesh, intact shells, and heads that are tightly attached to the body.
  • Do not buy shrimp with spread-out, loose tails, missing tail fins, and not neatly arranged. They may have been caught a long time ago or soaked in preservatives.

How to choose good quail eggs

  • Choose quail eggs with beautiful, sturdy shells, no gray color, and no patterns.
  • When holding the egg in your hand and shining a light through it or under sunlight, make sure to only expose both ends of the egg. Look at the egg from one side while shining light from the other side. If it is a fresh egg, it will have a translucent pink color with a pink dot in the center.

  • Prepare Shrimp and Meat

    Wash the pork thoroughly and cut it into small bite-sized pieces.

    Peel and remove the black veins from the shrimp, then wash them clean and dice them.

    Marinate the two portions of shrimp and meat with the following seasonings: 1 teaspoon of seasoning powder, 1/2 teaspoon of salt, 1/2 teaspoon of monosodium glutamate, 1/2 tablespoon of sugar. Mix well and marinate for 20 minutes for the shrimp and meat to absorb the flavors.

    • You count backwards from the tail of the shrimp to the second groove connecting the two segments of the shell, insert a toothpick through this position and gently pull the black vein to remove it.
    • You don’t need to cut the back of the shrimp with a knife; you can also use a toothpick to pry out the head part of the shrimp body to find the black vein. Gently pull this black thread out, and the shrimp will be clean.

    Soak the wood ear mushrooms in water for about 20 – 30 minutes until they expand. Then, wash them clean, cut off the stems, and slice them into thin strips. To reduce the strong smell of the mushrooms, after slicing, you can briefly blanch them in boiling water and then rinse them with water.

    • You only need to soak them in cold water until they expand, for a maximum of about 3 hours. If soaked too long, the toxins in the mushrooms will increase, especially morpholine which appears more over time.
    • Absolutely do not soak in hot water because hot water will stimulate the toxins in the wood ear mushrooms causing food poisoning.

    Peel the squash and carrots and cut them into small cubes.

    Wash the green onions and chop them finely.

    When you buy corn, remove the husk and silk, then use your hands (or a knife) to separate the kernels from the cob.

  • Cook the soup

    Place a pot on the stove with about 1 liter of water, bring it to a boil, then add the corn, carrots, and peas. Next, add the pumpkin and continue cooking until the water in the pot comes to a boil again.

    Then, add shrimp, meat, quail eggs, and wood ear mushrooms, and cook until the mixture is done.

    Beat 2 chicken eggs, gradually pour them in while stirring evenly with chopsticks.

    To thicken the soup, dissolve 3 tablespoons of flour in water, then gradually pour it into the pot while stirring until the desired thickness is achieved.

    Finally, season with 1/2 teaspoon of salt, monosodium glutamate, and pepper each, along with 1 tablespoon of sugar, then stir well. Cook until the soup mixture boils again, add the chopped green onions, and it’s done.

    Tip:
    • During cooking, remember to skim off all the white foam to keep the soup clear and tastier!
    • You should adjust the seasoning to suit your family’s taste!
