Water lily stem 2 pieces (mint) Tomato 3 pieces Bamboo shoots 100 gr Fried tofu 5 pieces Oyster mushrooms 100 gr Bean sprouts 80 gr Cilantro 5 sprigs Tamarind a little (1 small squeeze) Chili 1 piece Cooking oil 3 tablespoons Vegetarian seasoning 2 teaspoons Common spices a little (salt/ sugar/ monosodium glutamate)

How to choose fresh ingredients

How to choose fresh and delicious water morning glory (bạc hà)

  • Fresh water morning glory will have a light green outer skin, smooth skin, and a certain level of freshness; when you touch it, you can still feel the crispness of the plant.
  • Choose water morning glory stalks that are straight, of moderate size, dry, and feel light to the hand.
  • To ensure the freshness of water morning glory, it is best to buy them whole, not cut, because at this point, you can easily check their freshness.
  • Avoid buying water morning glory that is too large, as they may have been grown in places with many impurities or have been over-fertilized or sprayed with chemicals.
  • Limit buying water morning glory that has been cut into pieces, as these may be old stalks.
  • Do not buy water morning glory that is bruised, soft, or oozing water, as they are spoiled and no longer usable.

How to choose fresh and delicious tomatoes

  • You should choose tomatoes with bright red skin, plump and juicy, as they are naturally ripened tomatoes, which will taste very sweet when eaten.
  • When you touch them, you should feel a certain softness; if they feel firm when you pick them up, they are fresh tomatoes.
  • Do not choose tomatoes that are dark in color, with hard skin, as they are tomatoes that have been chemically treated or artificially ripened.

  • You should choose oyster mushrooms that grow in clusters, with thin and smooth fibers under the cap, as these are fresh and just harvested mushrooms.
  • When smelling fresh oyster mushrooms, they will have the characteristic aroma of mushrooms, and when held, they feel firm.
  • It is best to buy packaged oyster mushrooms with careful packaging, clearly printed origin, and information such as production date and expiry date.
  • Do not buy oyster mushrooms if you see they are leaking water, slimy, crushed, or have a strange smell, as these mushrooms are spoiled and cannot be used.

How to choose delicious fried tofu

  • When buying pre-fried tofu, you should pay attention to buy pieces that are bright yellow, and when pressed, they feel soft and smooth, as these are freshly fried and delicious tofu.
  • Choose fried tofu when you smell a light aroma of soybeans, with no strange odor.
  • Do not buy pre-fried tofu that is dark yellow as they may have been fried with dirty oil or reused oil.
  • Tofu that feels hard when pressed, or has no smell or a sour smell should definitely not be purchased.

How to prepare Sour Vegetarian Mushroom Soup

  • Prepare the ingredients

    Fresh bamboo shoots should be peeled, rinsed with water, and cut into small diagonal pieces about the length of one finger segment.

    To remove the sour salty taste from the sour bamboo, wash and rinse it with water 2 – 3 times and then let it drain.

    Oyster mushrooms should be washed with diluted salt water, then rinsed with clean water and squeezed dry.

    Tofu should be rinsed briefly with water and cut into bite-sized pieces. Tomatoes should have their stems removed, be washed clean, and cut into wedges.

    Beansprouts, cilantro, and chili should be washed thoroughly and allowed to drain. Remove the stems from the chilies and slice them, and chop the cilantro finely.

  • Cooking Soup

    Add 3 tablespoons of cooking oil into the pot, heat the oil and then add the tomatoes, stir-frying evenly over medium heat. When the tomatoes are slightly cooked, add the sliced mushrooms and chili, stir-frying for 3 – 5 minutes.

    Next, add 1 liter of water, sour bamboo shoots, and the seasoning mixture including: 1 tablespoon of sugar, 2 teaspoons of monosodium glutamate, 1/2 teaspoon of salt, 2 teaspoons of vegetarian seasoning, and 1 squeeze of sour tamarind into the pot.

    Bring to a boil over medium heat, then add the tofu and cook for about 2 – 3 minutes before adding the shredded vegetable and bean sprouts to the pot.

    Let the soup boil for an additional 2 minutes, taste and adjust the seasoning as needed, turn off the stove and add chopped coriander before serving.
