- You should choose tomatoes that have a bright red outer skin, evenly colored. The outer skin should be intact, without scratches, and firm to the touch, indicating fresh and delicious tomatoes.

How to prepare Salmon Soup

Prepare the fish
First, use a knife to open the belly of the fish, cutting and removing all the internal organs. Use a knife to cut the fins from the head to the tail of the fish. After that, clean the scales on the outside of the fish and rinse it with water.
Use a knife to cut the fish into slices about 2 finger joints thick.
Tip: To remove the fish’s slime, you can wash the salmon with rice water, rubbing the fish while washing, then rinse again with clean water. -
Frying Fish
To prevent the fish from being fishy and to retain its natural sweetness, you should fry it briefly before cooking the soup.
Add 4 tablespoons of cooking oil to the pan over low heat, when the oil is hot, add the fish and fry until the fish is slightly golden, then remove it and turn off the heat.

Prepare Other Ingredients
Tomatoes should be washed, then cut into wedges. Celery should have the roots removed, washed, and then sliced diagonally from the base to the tip, about 2 finger lengths long.
Shallots should be peeled, washed, and sliced thinly to fry for the soup.
Green onions and dill should have the roots removed, washed, and then cut into pieces about 1 – 2 finger lengths or chopped finely as desired.

Cooking the soup
Add 1 tablespoon of cooking oil to the pot, and when the oil is hot, add the shallots and sauté until golden. Then, add the tomatoes and half a teaspoon of seasoning powder to stir-fry until the tomatoes are firm and release their natural color, making the dish more appealing. Be careful to keep the heat low to avoid oil splattering.
Next, add 1 liter of water to the pot, season with another half teaspoon of seasoning powder, one teaspoon of sugar, and half a teaspoon of salt. You can adjust according to your taste.
When the water boils, add the fish to the pot and cook, remembering to skim off any foam to keep the soup clear.
Cook for another 15 minutes on low heat to ensure the fish is cooked and the soup is sweeter, then increase the heat, add celery and green onions, and when the soup boils again, turn off the heat.
Serve the soup in a bowl, garnished with a little dill on top.
