Ingredients for Chicken Rice For 4 people

How to choose fresh and delicious chicken
- You should choose chicken pieces with thin skin, golden color, and a smooth touch.
- Choose chicken with naturally pinkish-red meat, not too pale or too dark.
- Do not choose chicken pieces with bruises or blood spots and meat that is pale or has turned too dark.
How to Prepare Chicken Rice

Preparation and Marination of Chicken
After purchasing the chicken, wash it thoroughly, then use 2 spoons of salt to rub around the chicken and soak for about 5 minutes, then rinse with clean water.
How to clean chicken without odor
- Method 1: After washing the chicken, mix salt with a little vinegar and rub it evenly over the entire chicken and soak for about 3 – 5 minutes. Then, simply rinse the chicken with clean water several times, and it will be ready for cooking.
- Method 2: Similar to the above method, mix salt with a few drops of lemon and rub it over the cleaned chicken and soak for 5 minutes. Finally, just rinse the chicken thoroughly.

In a bowl, add 3 tablespoons of turmeric powder and 1 tablespoon of seasoning powder, then mix well.
Next, evenly apply the turmeric powder and seasoning powder all over the chicken, then gently pat and massage the chicken to absorb the spices evenly.
Marinate for 15 minutes.

Prepare the other ingredients
Peel the onion, shallots, ginger, lemongrass, and garlic, then wash them thoroughly.
Remove the stems from the chili peppers and chop them finely along with the garlic. Slice the shallots into thin rings.
Grill the onion, ginger, and lemongrass for 2 – 3 minutes on the stove until they are charred and fragrant.
Wash the cabbage and Vietnamese coriander, drain them, then cut the cabbage into thin strips and chop the Vietnamese coriander.
Add the shredded cabbage, sliced shallots, and chopped Vietnamese coriander into a bowl along with 4 tablespoons of sugar, the juice of 1/2 lemon, and mix well for about 2 minutes to let the ingredients absorb the seasoning.

Boiled Chicken
You add 1 liter of water to the pot along with lemongrass, ginger, and roasted onion, 1/4 teaspoon of salt, and then cook on the stove at medium heat for about 5 – 7 minutes.
When the water begins to simmer, you add the marinated chicken to the pot and cover the lid to cook for 30 minutes until the chicken is evenly cooked.
When the chicken is cooked, you take it out and immediately place it in a bowl of ice water and leave it until the chicken cools completely before taking it out.
Next, you strain the chicken broth through a sieve to remove the lemongrass, onion, and ginger, keeping only the broth to later cook rice and soup according to your preference!

Cooking Rice
You wash the rice thoroughly with 2 – 3 times of water, then add the rice to the pot along with 3 bowls of the filtered chicken broth (rice bowl) and cook in the rice cooker.

Making the dipping sauce
You put 115g of sugar, 150ml of water, 75ml of fish sauce, juice of 1/2 lemon into a large bowl and stir well until the sugar dissolves, then add 4 minced garlic cloves, 2 minced chili peppers, and stir again.

Completion
You chop the chicken into bite-sized pieces, and the remaining chicken meat attached to the bones should be shredded.
Scoop the rice onto a plate along with the chicken pieces and shredded chicken arranged around it, add a little mixed cabbage, and then prepare a bowl of fish sauce on the side to enjoy.
