How to prepare Rambutan chicken salad

Prepare the rambutan
You dissolve 1 basin of diluted salt water and soak the rambutan in it. Next, you use a small knife with a sharp tip to slowly peel the outer skin to get the rambutan flesh inside.
After taking the rambutan flesh, you wash it clean and cut it into round flower-shaped slices or separate each segment.
You dissolve 1 liter of water + 1/2 tablespoon of sugar + 1/2 tablespoon of vinegar, soak the rambutan in this mixture, then put it in the fridge.

Prepare the chicken and other ingredients
After washing the chicken, place it in a pot to boil. Fill the pot with water to cover the chicken, add 1 teaspoon of salt and 2 shallots. Boil the chicken for about 20 minutes, then remove the chicken and let it cool.
Wash and chop the Vietnamese coriander and basil.
Roast the peanuts until cooked, remove the shells, and crush them.
Minced garlic and chili.

Make the sweet and sour fish sauce
Squeeze the juice from 1 lemon and mix it with 3 tablespoons of sugar, stirring well until the sugar completely dissolves. Next, add a tablespoon of fish sauce to the lemon-sugar mixture. Stir well to combine the fish sauce. Finally, add the minced garlic and chili and mix well.

Mix the salad
After the chicken has cooled, shred it for the salad; to ensure the salad is well mixed, start mixing just before serving.
Put the chicken in a large bowl, then add the mangosteen, Vietnamese coriander, basil, and sweet and sour fish sauce, gently mixing for about 5 minutes to allow the ingredients to absorb the flavors.

How to Make Mangosteen Sweet Soup

Prepare the Ingredients
Wash the pandan leaves, cut them into pieces, then put them in a blender with 100ml of water and blend until smooth. Use a strainer to extract the pandan leaf juice, discarding the residue.
Wash the mangosteen, separate each segment, and roll it in tapioca flour.

Cooking the dessert
Add the pandan leaf water, coconut milk, brown sugar, and 100 ml of boiling water into a pot and cook until the mixture thickens slightly, then turn off the heat.
The mangosteen segments that have been coated in tapioca flour should be dropped into the pot and boiled until cooked. When the tapioca flour becomes translucent, it is done; turn off the heat and transfer the mangosteen to a bowl of boiling water to cool.
When ready to eat, simply add the mangosteen into the pandan mixture and enjoy.
How to choose delicious mangosteen
- The bottom of the fruit: at the bottom of the mangosteen fruit, there will be a small flower shape with many petals. You can count the number of petals on this flower, and there will be that many segments inside the mangosteen. Therefore, you should choose the ones with a flower that has many petals for better quality.
- Preferably choose mangosteen fruits that have yellow sap streaks sticking to the outside of the skin, as this indicates that the mangosteen is very sweet. Additionally, you should choose those with grayish, rough skin for better taste.
- Fruit skin: you can also check if the mangosteen is ripe and sweet by pressing around the skin of the fruit. If it feels uniformly soft, then it is ripe and not spoiled.
