All-purpose flour No. 8 112 gr Cheese 1 slice Lion’s flour 29 gr Cornstarch 10 gr Gelatin 2 gr Whipping cream 30 ml Unsalted butter, melted 81 gr Condensed milk 36 ml Unsweetened fresh milk 100 ml Chicken egg 1 piece (Only the yolk) Salted egg yolk 70 gr (About 5 yolks) Honey 36 ml Sugar 40 gr

  • You should hold the salted egg under a light or sunlight, good quality salted eggs will have clear egg whites, the yolks will be small, pink, and close to the shell.
  • Avoid choosing salted eggs with cracks, cloudy egg whites, thin yolks, and unusual foul smells as they may be too old.

How to choose fresh and delicious chicken eggs

  • You should choose chicken eggs with a dark brown shell, even in color, feel rough to the touch, and make no noise when shaken gently.
  • Additionally, when viewed under light, the yolk should be round, with an orange or light pink color, located in the center of the egg and the white should be clear, indicating that it is fresh.
  • Avoid choosing chicken eggs that are pale in color, have cracks, feel smooth to the touch, and have a red yolk, as these are eggs that have been stored for a long time.

How to make salted egg and cheese mooncake

  • Bake the salted eggs

    First, place 5 salted egg yolks on a plate and put them in an oven at 150 degrees Celsius for about 10 minutes.

    After the yolks are cooked, take them out of the oven and use a fork to mash them until smooth.

  • Melt gelatin and fresh milk

    Use scissors to cut 2g of gelatin into 30ml of fresh milk and soak until soft.

    Then, microwave for about 30 seconds at low power until the gelatin dissolves, or steam it if there is no microwave.

    Note: You should not microwave the gelatin and fresh milk mixture at high power as it will cause the milk to boil and overflow the microwave!

  • Make molten egg filling

    Add 30ml of whipping cream, 15g of sugar, 15g of melted unsalted butter, 7g of lion powder, 20g of mashed salted egg yolk with a slice of cheese into a bowl and mix well until the mixture is thick.

    Continue to add the melted gelatin and fresh milk mixture and mix thoroughly.

    Next, place a pot on the stove, pour the mixed mixture into a sieve and place it over the pot, using a spoon to press down so that the filling becomes smooth.

    After filtering, cook the mixture over medium heat for about 2 – 3 minutes until it thickens, then turn off the heat.

    Place the warm filling onto a plastic wrap laid out on the table, roll it into a round shape, and put it in the refrigerator for about 2 hours to firm up the filling.

  • Make custard egg milk filling

    Prepare another bowl, add 70ml of unsweetened fresh milk, 12gr of flour, 12gr of lion sugar, 25gr of sugar, 1 egg yolk, and mix the mixture well then strain through a sieve.

    Place a pot on the stove, add 30gr of melted unsalted butter along with the mixture above and 50gr of salted egg yolk, stirring continuously for about 3 – 5 minutes until the mixture thickens slightly, then turn off the heat.

    After that, pour the filling onto plastic wrap and shape it into a rectangle, then place it in the refrigerator for about 2 hours to let it set.

  • Mixing the dough for the pastry

    You put 100g of wheat flour, 10g of lion starch, 10g of corn starch, 36ml of condensed milk, 36ml of honey, and 36g of melted unsalted butter into a bowl and mix well until the mixture forms a mass.

    Wrap the mixed dough in plastic wrap and put it in the refrigerator for about 2 hours.

  • Shaping the filling

    After the salted egg filling has set, take it out and divide it into 10 equal parts (each part about 6g), then roll them into round balls.

    Similarly, for the custard egg filling, take it out of the refrigerator and divide it into chunks (each chunk about 18g). Then use your hands to flatten it and place the salted egg filling inside, rolling it back into a ball.

    Wrap the entire shaped filling in plastic wrap and place it in the refrigerator for another 30 minutes to firm up the filling.

  • Wrap the cake

    Take the cake dough out of the refrigerator, cut it into pieces of about 22 grams.

    Next, flatten the dough and place the filling in the middle, then wrap it tightly so that the dough covers the filling completely, then roll it into a ball.

    Next, sprinkle a little flour on the cake and place it in a jelly mold, using your hands to gently press it so that the dough fits snugly in the mold to shape the cake.

    Preheat the oven to 180 degrees Celsius for about 15 minutes. Bake the cake in the oven for about 10 minutes at 200 degrees Celsius and the cake is ready.
