Ingredients for Baked Buns with Meat and Cheese Filling For 8 buns

How to make Baked Bao with Meat and Cheese Filling

Mix the dough for the bao skin
Put 250g of flour, 50g of sugar, 5g of instant yeast, 1/4 teaspoon of salt, 20ml of cooking oil, 30g of egg white, and 100ml of unsweetened fresh milk into a bowl.
Use a whisk to mix the ingredients until well combined.
Note: Do not add salt directly to the yeast, as this will kill the yeast or weaken its activity. You can mix the salt with the flour first, then add the yeast. -
Knead and proof the dough
Place the dough on the table and knead it.
Fold the dough in half and use the palm of your hand to push the dough away, rotate the dough 90 degrees and continue repeating the two actions for about 15 – 20 minutes. Knead until the dough is no longer sticky, smooth, and forms a cohesive mass.
Put the dough in a bowl, cover it, and proof for 2 hours until the dough doubles in size.

Prepare the filling
Soak 50g of wood ear mushrooms until soft, wash them clean, then chop them finely.
Put 300g of ground pork, 2 teaspoons of seasoning powder, 1/2 teaspoon of sugar, 1/2 teaspoon of pepper, and 50g of wood ear mushrooms into a bowl.
Mix the filling well and marinate for 15 minutes.

Sauté the filling
Heat a pan with a little cooking oil, and sauté 20g of diced onion until fragrant.
Next, add the filling and sauté until cooked evenly.

Shape the buns
Divide the dough into 8 portions, then roll them into balls and flatten them.
Place the meat and mozzarella cheese filling in the center, pinch the edges of the dough together, and roll into a ball.

Baking the buns
Preheat the oven to 180 degrees Celsius for 10 minutes.
Beat 1 egg and brush a thin layer on the surface of the buns, then sprinkle with sesame seeds. After that, bake the buns at 160 degrees Celsius for 15 – 20 minutes.

The baked buns have an eye-catching golden-brown crust, soft and smooth, with a rich meat filling and melted creamy cheese, irresistibly delicious.
Tips for Successful Execution
- If the dough does not rise, it may be because you forgot to add the yeast, the amount of yeast is less than the bao dough, or you haven’t kneaded the dough enough. Therefore, the ratios of flour and yeast must be correct.
- Do not let the dough rise for too long as it will cause the dough to have a sour smell.

- Uncooked buns: Wrap the buns tightly in plastic wrap and place them in the refrigerator. This method can preserve the buns for about a week.
- Buns after baking: Wrap the buns tightly in plastic wrap and place them in the refrigerator to keep for a week. If placed in the freezer, they can be stored for 2 weeks; just defrost and reheat to enjoy.
