How to make Grilled Cassava Cake using an Air Fryer

  • Prepare the cassava

    After purchasing the cassava, use a knife to peel off the outer skin and the pink skin, then wash it thoroughly, cut it into pieces, and soak it in salt water for about 1 – 2 hours.

    Note: During the soaking process, you must change the water every 30 minutes.

  • Steaming cassava

    After soaking the cassava in salt water to remove some sap and dirt, you drain it in a colander and rinse it with clean water once more. Then place the cassava in a steamer and steam until it is soft and cooked.

  • Mashing cassava

    You take the steamed cassava out into a bowl, remove the fibrous part inside the cassava, and use your hands or a spoon to mash it until it is smooth and fine, which is the desired consistency.

    Before baking the cake, preheat the air fryer to 170 degrees Celsius for 5 minutes.

Fresh cassava 1 kg Coconut milk 400 ml Mung beans 50 gr Tapioca flour 110 gr Condensed milk 80 gr Cream powder 30 gr Vanilla powder 1/2 teaspoon Cooking oil 30 gr Sugar 40 gr Salt 1/2 teaspoon Filtered water 150 ml

How to make Baked Cassava Cake in Air Fryer

  • Prepare, grind, and squeeze cassava

    Use 1 kg of fresh cassava, peel it, and soak it in a diluted saltwater solution for about 6 – 12 hours.

    After that, rinse thoroughly, cut into small pieces, and put it in a blender, blending it with 400ml of water until smooth.

    Once blended, place the mixture into a bag or a muslin cloth to squeeze out the water, retaining only the cassava residue. For the water, let it sit for 30 minutes for the cassava starch to settle, then pour off the water.

  • Mix the cake batter

    Add all the prepared ingredients including: 400ml of coconut milk, 150ml of water, 110gr of tapioca flour, 1/2 teaspoon of salt, 30gr of cream powder, 50gr of soaked mung beans, 80gr of condensed milk, 40gr of sugar, 30gr of cooking oil, and 1/2 teaspoon of vanilla powder into the squeezed cassava.

    Next, mix all the ingredients together and let the mixture rest for 5 – 10 minutes for the cassava to expand.

    The water squeezed from the cassava after settling should be poured off, leaving the starch settled at the bottom. Add this starch to the cassava mixture above and mix well.

  • Bake the cake

    Use a mold greased with oil or lined with parchment paper in the air fryer. Pour the mixed cassava mixture into the air fryer.

    You will bake the cake twice. The first time, place the cake in and bake at 150 degrees Celsius for 45 – 60 minutes, depending on the thickness of the cake.

    Next, take the cake out to check its doneness. If you find that the cake is done, place it back in the oven and bake a second time at 175 – 180 degrees Celsius for 8 minutes to brown the top of the cake.

How to choose and prepare cassava (manioc)

  • Use your fingernail to lightly scrape the thin outer skin; if the inner skin is light pink, choose it, if it is white, you should skip it, because the pink skin has fewer toxins than the white skin.
