How to make Peach Blossom Buns

Prepare the filling
Take 2 egg yolks into a bowl, add 30 grams of sugar, and use a whisk to mix well.
Then add 80 ml of fresh milk, 70 ml of coconut milk, and sift 20 grams of cornstarch into the bowl and stir well.
Place a pot on the stove and wait for it to heat up over medium heat, then add the mixture and stir continuously.
Stir until it thickens slightly, then add 1/2 teaspoon of vanilla extract, 1/2 teaspoon of salt, and 20 grams of unsalted butter, stir well and turn off the heat.
Let it cool, then divide into 16 equal portions.

Making the dough
You put a pot on the stove and wait for it to heat up, turn the heat to medium, add 30 ml of water, then add 50 ml of fresh milk, 20 gr of flour and stir well. When it thickens a bit, turn off the heat and let it cool.
You warm 25 ml of unsweetened fresh milk to about 40 degrees Celsius and put it in a bowl (or you can put the unsweetened fresh milk in a bowl and soak it in a basin of hot water to warm it, then take it out), add 3 gr of yeast, stir well and let it sit for about 10 minutes.
You add 270 gr of flour to the bowl, add 45 gr of sugar, 2 gr of salt, 4 gr of baking powder, 65 gr of whipping cream, 1 egg white, 90 gr of Tangzhong, and then add the yeast mixture from above and knead until a lump forms.
You place the dough in a bowl, brush a layer of oil on top, cover the bowl with plastic wrap, and let the dough rest for 2 hours.
When the dough has risen, you divide it in half and then into 16 equal parts or according to your preferred size, roll the dough into balls and let it rest for about 5 minutes.

Wrapping the buns
You take each dough ball, roll it out into a thin round shape, then place a filling ball inside and wrap it up, forming the bun’s top. Use a knife to make a vertical cut from the top down to create the peach shape.
Then, you use a beetroot cut in half to dab on the top to create the red color of the peach. Under each bun, place a piece of paper.

Steaming the buns
You put the buns in a steamer or rice cooker with a steaming tray for 20 minutes and arrange them on a plate, inviting your family to enjoy.
