Ingredients for Flattened Rice Mixed with Coconut Serves 3 people
Flattened rice 250 gr Pandan leaves 200 gr Coconut milk 1/2 can Dried coconut 1/2 fruit
Tip:
- Flattened rice is quite commonly sold at grocery stores, supermarkets, or you can easily purchase it online.
- There are two types of flattened rice, white and green; you can use whichever you prefer.

How to make flattened rice mixed with coconut

Prepare the ingredients
Flattened rice is poured onto a sieve, rinsed with water until clean, and then drained.
Pandan leaves are washed, chopped small, and then put into a blender with 100ml of water, blended until smooth, and then strained to extract the juice.
For the dry coconut, use a coconut grater to shred it into strands.

Boil the coconut water
Coconut milk is dissolved with 50g of sugar and 1/4 teaspoon of salt, then brought to a boil. After the coconut milk boils, add 2 tablespoons of pandan leaf juice, and continue to boil until the coconut milk boils again.

Mixing rice flakes with coconut milk
After draining the rice flakes, put them in a bowl and gradually pour the coconut milk over them, mixing as you pour. When the rice flakes are just wet enough, stop and let them absorb the coconut milk for 30 minutes.
After 30 minutes, reheat the coconut milk until hot, then continue to pour it over the rice flakes, mixing as you go, and let it sit for another 30 minutes. Repeat this process one more time, for a total of three times mixing coconut milk into the rice flakes.
Finally, mix in 1 tablespoon of sugar to enhance the sweetness (if you don’t like it sweet, you can skip this step). After mixing in the sugar, add shredded coconut to the rice flakes, and you’re done.

The finished product
Serve the mixed rice flakes with coconut on a plate and it’s ready to enjoy. This dish can be served as breakfast or as a light snack between meals.

- The coconut-mixed glutinous rice meets the requirements when it absorbs coconut milk, is soft and sweet, and does not become mushy or crushed. The glutinous rice has a lush green color, shiny, with a light aroma of pandan leaves.
- Be careful during the process of washing the glutinous rice; do not let it soak in water for too long as it will become mushy.
- When mixing coconut water, mix just enough; too much will also make the glutinous rice mushy and sticky, making it difficult to eat.
