Yogurt is a very healthy food, good for our skin and digestive system. In this article, Dien May Xanh will guide you into the kitchen to make upside-down yogurt at home using an air fryer!
Ingredients for Making Upside-down Yogurt For 12 jars of yogurt
Unsweetened fresh milk 500 ml Condensed milk 380 gr (1 can) Laughing Cow cheese 4 pieces Yogurt 2 cups

How to Make Upside-down Yogurt

Sterilize the tools
Place the glass jars into a large pot, then pour boiling water into the jars and soak for at least 5 minutes.
After 5 minutes, pour out all the water from the jars and place them in the air fryer, selecting the lowest temperature for 5 minutes to dry the glass jars.

Sift the cheese
Put 4 pieces of Laughing Cow cheese into a bowl with 4 tablespoons of boiling water and use a spoon to mash the cheese in the water.
Then pour the cheese mixture through a strainer, with a bowl underneath to catch it. Use a spoon to press and push the cheese through the strainer to obtain a smooth cheese mixture in the bowl.

Make yogurt
Take a large pot, pour in 1 can of condensed milk along with 500ml of milk and 1 can of warm water (45 degrees Celsius) and stir well until the condensed milk dissolves completely.
Next, pour the sifted cheese and 2 cups of yogurt into the pot and continue to mix the mixture well.
After the yogurt mixture is complete, pour it into prepared glass jars and tightly cover the mouths of the jars with aluminum foil.

Yogurt fermentation
You preheat the air fryer at 90 degrees for 5 minutes.
Then you arrange the yogurt jars into the air fryer tray, then place them into the fermentation pot.
After 2 hours of fermenting yogurt in the air fryer, you set the pot to 90 degrees for another 5 minutes.
After those 5 minutes, you should leave the yogurt in the fermentation pot for another 6 hours.
Note:- During the yogurt fermentation process, do not open the pot.
- It is recommended to do this before going to bed to avoid waiting anxiously.

Final Product
The yogurt after completion has a high consistency, and when turned upside down, it does not leak out. However, when eaten, you can still feel the smooth, creamy texture of the yogurt along with the slightly sour, sweet, and lightly fatty taste of cheese, which will bring wonderful meals.
Successful Implementation Tips
- All yogurt-making tools, especially the containers, need to be sterilized to prevent contamination and ensure the yogurt is perfect. Doing so can avoid issues like sliminess, thin consistency, or green/yellow coloring, unpleasant odors, and bitterness.
- Minimize moving or touching the yogurt jars while incubating, as this can cause the yogurt to separate, curdle, and affect the thickening process of the milk.
- To successfully make upside-down yogurt, you should use homemade yogurt starter because it contains natural cultures, making the fermentation process easier.
- The hot water added to the yogurt should be at 45 – 50 degrees (warm water) to avoid killing the cultures, which could spoil the yogurt and cause it to separate.
Storage Tips:
You can store it in the refrigerator’s cool compartment for 1 to 2 weeks, while if kept in a cool place, it should only be consumed within 2 days after completion.
