Make coconut jelly
Put the sugar in a bowl and mix it evenly with 2 teaspoons of soft jelly powder and 1 teaspoon of hard jelly powder.
Pour the fresh coconut water into a pot, then add the sugar and jelly mixture. Stir while cooking until the sugar and jelly dissolve and the mixture boils. Remember to skim off the foam during the cooking process.
Scoop the jelly mixture into the mold and place it in the cool refrigerator for about 2 hours before serving. You can also add other flavors like coffee, pandan leaves… to make the jelly more appealing.
