How to choose fresh and delicious duck

For live ducks

  • Choose ducks with shiny feathers, and the inner skin should show no down feathers while the outer feathers are long and full. Avoid ducks with rough feathers, unpleasant odors, or those that appear limp, as they may be sick.
  • When holding the duck’s breast, it should feel round and plump, with thick skin on the neck and belly indicating good quality.
  • If the duck’s wings can cross over each other, it’s a mature duck, easy to pluck, and has more meat.

For pre-prepared ducks

  • Choose ducks that are uniformly light yellow in color and feel fresh. Avoid ducks that are too dark or have bruises and discoloration.
  • Pressing on the meat should feel firm and elastic, indicating good quality; avoid those that feel soft, have a foul smell, or are watery, as they are stale and not good.

  • Prepare the duck

    To save time, you should ask the seller to clean it. When you buy it, you just need to eliminate the odor of the duck by plucking out the fine feathers and rubbing ginger and white alcohol onto the duck for about 5 minutes.

    Then wash it thoroughly with water and let it drain.

    Ways to prepare duck meat to reduce odor:

    • Method 1: Use salt, white alcohol, and crushed ginger to rub evenly over the duck for a few minutes, then wash it clean with water.
    • Method 2: Use salt to rub evenly over the duck, then use a lemon cut in half to rub evenly over the duck again and wash it clean with water.
    • Method 3: Use cooking vinegar and salt to rub thoroughly inside and outside the duck several times, then wash it with water and let it drain.

  • Marinate the duck meat

    Place the drained duck meat with 4 spoons of soy sauce, 1 tablespoon of minced garlic, and 1 tablespoon of minced shallots into the pan.

    Then, use your hands to massage evenly and marinate for about 15 – 20 minutes for the duck to absorb the spices, then take the duck out and let it drain.

  • Coat the duck with flour

    After the duck has drained, sprinkle 50g of flour and 50g of crispy frying flour on top, then use your hands to rub it evenly so that the flour coats the duck evenly.

    Tip: It is best to let the duck drain before coating it with flour, which helps the flour stick evenly to the duck and prevents clumping, while also preventing oil from splattering during frying.

  • Fry the duck

    Place a pan on the stove, add 100ml of cooking oil into the pan and heat it over medium heat for about 1 minute, then add the duck and fry it over medium heat for about 8 minutes until the duck is golden brown on all sides, then remove it and turn off the heat.

    Tip:

    • During frying, you should frequently use a spoon to drizzle oil evenly over the duck, helping the skin to become golden and crispy.
    • It is advisable to fry over medium and low heat, ensuring the meat inside is cooked evenly, the skin outside is golden and crispy, and does not burn.

  • Seasoning the Duck with Chili Powder

    After frying the duck, take 50g of chili powder and sprinkle it evenly over all sides of the duck until it is coated with chili powder.
