Tips for choosing good shiitake mushrooms:
- For fresh mushrooms, choose those with bright colors, distinct aromas, and avoid bruised or spoiled ones. If the cut has a milky white substance, it indicates toxic mushrooms. Avoid those with dark spots or wrinkles on the caps, and do not choose slimy mushrooms. Fresh mushrooms will have a thin, paper-like layer on them. Choose mushrooms with firm stems and even colors; if the mushrooms have opened up, the gills should be evenly spaced, beautiful, and dry.
- When selecting fresh shiitake mushrooms, choose those with medium-sized caps that are tightly curled and slightly yellowish-brown. If you see dark brown mushrooms, do not purchase them as they may be toxic.

How to make crispy vegetarian rice paper rolls

Prepare the ingredients
Soak glass noodles in water for about 10 minutes until softened, then cut into small pieces.
Soak wood ear mushrooms in water for about 15 minutes until softened, trim the stems, and slice thinly.
Soak vegetarian pork slices in water for about 20 minutes until softened, drain, then cut into strips.
Clean the corn and shave it thinly. Chop the green onions.
Wash the dried shiitake mushrooms in water to remove dirt, then place them in a bowl of hot water with a little salt and soak until softened for about 30 minutes, then drain the mushrooms. Remove the stems from the mushrooms. The stems are very tough and will not taste good if left in while cooking. Rinse the mushrooms several times and gently squeeze out excess water by hand after each rinse. Then cut the mushrooms in half for bite-sized pieces.
Tip:
To soak the mushrooms faster, use warm or hot water. Add a little salt to the soaking water. When soaking, make sure the mushroom stems are submerged in the water. This method will help you easily remove dirt from the shiitake mushrooms.

Stir-fry the filling
Heat a pan on the stove, add about 2 tablespoons of cooking oil, and when the oil is hot, add the chopped onions to sauté until fragrant.

Finally, add the softened glass noodles and crushed roasted peanuts, stir well for 1 minute, then turn off the heat.

Dip the rice paper in water until soft. Spread the rice paper evenly on a tray and add a moderate amount of filling.
Roll the rice paper into a long shape and then roll it up tightly, making sure to press the ends firmly so that oil does not seep in. Then, pin the rolled rice paper onto a skewer.

Place a pan on the stove, turn on the heat to low, and add the rolled rice papers to fry in hot oil. Fry until the rice paper expands and is crispy on all sides, then remove and let drain excess oil.
