Preliminary processing of frogs
To remove the fishy smell of frog meat, wash the frogs you bought with 100ml of white wine or vinegar.
Then rinse with clean water and let drain, cut into small bite-sized pieces.
How to process whole frogs:
- First, you need to remove parts such as the head, hands, and feet of the frog.
- The frog’s spine contains anesthetic substances that are not good for health, so you also need to remove the frog’s spine.
- Remove the internal organs and blood vessels in the frog’s muscles. These are organs that contain many harmful parasitic worms.
- After removing the above parts, wash the frog meat with water mixed with vinegar or wine along with crushed ginger. While washing, use your hands to rub to clean the frog meat better. Then rinse with cold water.

Marinate the frog meat
Wait for the frog to dry, then place the prepared frog into a bowl.
Marinate the frog with 1 tablespoon of garlic powder, and 1 tablespoon of seasoning powder. Mix well and let it marinate for about 30 minutes for the frog to absorb the seasoning!

Prepare and fry the lemongrass
Pick off the wilted leaves from the basil, rinse it clean, and let it dry.
Wash the lemongrass with water, let it dry, then smash it and shred it into small strips lengthwise.
Use a sieve to dust 20g of crispy flour onto the shredded lemongrass, mix well to ensure the flour coats the lemongrass evenly.
Then heat about 10 tablespoons of cooking oil on the stove, add the basil and fry for about 1 minute, then remove it. Next, add the lemongrass and fry for about 5 minutes until golden and fragrant.
Tip: To make the “straw” fry up crispy and fragrant, you need to coat it with crispy flour. If you don’t have crispy flour, you can substitute it with all-purpose flour or cornstarch. -
Fry the frog
Once the frog has marinated for enough time, add 30g of crispy frying flour and mix well to coat the frog meat with a layer of flour.
Use the oil that was just used to fry the lemongrass; when the oil is hot, add the frog and fry over medium heat for about 10 minutes until the frog is cooked evenly.
