Prepare frog skin
How to peel frog skin: If the frog skin has not been peeled when purchased from the store, you can peel it at home by:
- Firmly hold the hips by grabbing both hind legs and front legs of the frog, then cut off the frog’s head while also cutting off the feet of the front and hind legs.
- Make a vertical cut on the skin along the frog’s back using scissors or a knife, then grasp the skin and peel it to the sides down to the belly, then peel down to the legs. Doing this will make the peeling process easier.
After obtaining the frog skin, wash it again with cold water, then add 2 tablespoons of salt and 2 tablespoons of vinegar and rub it vigorously to eliminate the fishy smell on the frog skin, then rinse again with cold water.
Next, bring a pot of water to boil, add 5g of smashed ginger and 1 tablespoon of salt, and boil until the water is boiling to blanch the frog skin, which helps to remove the fishy smell more thoroughly.
After blanching the frog skin, cut it into small pieces about 2cm wide.

Prepare garlic and chili
Peel the garlic into cloves, then crush them and remove the skin. Next, finely chop the garlic. Similarly, chop the chili finely.

Mix the flour
First, add 1 teaspoon of seasoning powder, 1/2 teaspoon of salt, and 1 teaspoon of fish sauce to the frog skin and mix well.
Continue to add 20g of tapioca flour to the frog skin and mix thoroughly so that the flour coats the skin evenly, then let it sit for 5 minutes for the flour to absorb and adhere firmly to the skin.

Fry the frog skin
Once the flour is mixed, place a pan with oil on the stove and heat it until hot. When the oil is hot, turn the heat to low and add the frog skin.
While frying, make sure to turn the skin evenly so that it cooks evenly and has a nice golden color.
When the frog skin is golden and crispy, remove it and place it on paper towels to absorb excess oil.

Making garlic and chili frog skin
You place a pan on the stove and turn on the heat until the pan is hot, then add 30g of butter and stir until the butter is completely melted.
When the butter has almost melted, you reduce the heat and add the minced garlic, sauté the garlic until it turns golden and fragrant.
When the garlic is golden and aromatic, add the chili and stir briefly for 3 to 4 times with chopsticks.
