Ingredients for Salted Egg Fried Meatballs Serves 4

Ground pork 200 gr Chopped onion 10 gr Grated coconut 50 gr Cornstarch 1 tablespoon MSG 1/2 teaspoon Seasoning powder 1 teaspoon Salted eggs 7 eggs (yolks)

Tools: frying pan, oven, pot, bowl, spoon,…

Note: for the ground pork, you can buy pre-ground pork or buy meat to grind yourself!

Tips for choosing good pork:

  • Color: if it is fresh pork, it will have a dry surface, bright red color, and a slightly firm surface. When cutting the meat, the cut surface should be bright pink, with white-pink skin, and soft. The fat should be bright, firm, and have a characteristic aroma. The joint bones should be smooth and clear. The bone marrow should stick tightly to the bone wall and be transparent.
  • Elasticity: press your finger into the meat and then release. If it does not leave a fingerprint, the meat rebounds quickly and has a bright pink color, then it is fresh meat; if the meat leaves a fingerprint, it is spoiled and should not be purchased!

How to make fried meatballs wrapped in salted egg

  • Prepare and bake salted eggs

    After separating the salted egg yolks and placing them in a separate bowl, add white wine and soak for 10 minutes to eliminate the fishy smell and enhance the flavor of the salted egg.

    Take each salted egg yolk out and bake in the oven at 170 degrees Celsius for 7 minutes. Then let them cool.

  • Marinate the pork

    Gradually add 20g of grated coconut, 1 tablespoon of cornstarch, 1/2 teaspoon of seasoning powder, and 1 teaspoon of seasoning into the ground meat and mix well to allow the meat to absorb the flavors.

  • Form the meatballs

    Take a portion of the meat, flatten it, and place the salted egg in the center, applying a layer of cooking oil on your gloves to prevent sticking while shaping the meat!

    Roll it evenly into a ball. Continue doing the same until all the eggs and meat are used up.

    Put the remaining grated coconut on a plate, and roll each meatball in the grated coconut to coat them evenly.

  • Fry the meatballs

    Add enough oil to the pan. Fry the meat until cooked and the coconut is evenly golden. Then remove and drain the oil.

    This salted egg fried meatball dish has a very unique flavor. Each crispy piece of meat is seasoned with rich flavors and a bit of the fatty taste of salted egg, which is very addictive, and dipping it in chili sauce or ketchup is also very delicious!
