How to prepare Stir-fried Pig Ears with Lemongrass and Chili

Prepare the pig ears
First, to prevent the pig ears from smelling, wash them and then scrub each nook and cranny with salt.
Next, scrape the pig ears clean. You need to scrape really well, getting into every nook and cranny to ensure that the pig ears are clean and odor-free, as those areas can have a lot of hair and dirt trapped in them. If you don’t do this thoroughly, there will be a lot of dirt left in the pig ears.
Crush 10g of ginger and place it in a bowl of hot water at about 80 degrees Celsius, mixed with 1-2 tablespoons of salt, 1 lemon, and 50ml of vinegar. After that, soak the pig ears in that solution for about 15 minutes, then rinse them clean to remove the smell.

Prepare the other ingredients
Slice 10g of ginger. Mince 4 stalks of lemongrass, 3 chilies, and 2 cloves of garlic.
Take a bowl to mix the sauce. Add 2 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of fish sauce, 1 teaspoon of MSG, 1 tablespoon of chili sauce, and 1 teaspoon of sugar, then stir all those ingredients together.

Boil the pig ears
Add the pig ears along with a bit of vinegar or squeeze a little lemon, 3 shallots, 2 stalks of lemongrass, and sliced ginger into a pot of water, then bring to a boil over high heat, then lower the heat.
When the water has boiled for about 15 minutes, use chopsticks to turn the pig ears over to ensure they cook evenly, and boil for another 5 – 10 minutes. When the pig ears are cooked, take them out and place them in a bowl of ice water to cool quickly and become crispy and whiter.
Tip: You can check if the pig ears are cooked by poking with chopsticks and feeling that the pig ears are soft!After the pig ears have cooled, take them out and slice them thinly.

Sautéed Pig Ears
First, mix the sliced pig ears with the sauce and marinate for 10 minutes to absorb the flavors.
Then heat a pan with oil and sauté 1/2 of the minced lemongrass along with minced garlic and minced chili.
When the lemongrass and garlic become fragrant, add the marinated pig ears and stir until the sauce thickens and becomes glossy.
At this point, taste the seasoning and add the remaining 1/2 of the minced lemongrass, then stir for another minute to allow the flavors to meld. Finally, turn off the heat and plate the dish.
