How to make Crispy Rice Cake

  • Grinding the leftover rice

    Put the leftover rice in a large bowl or small basin, use a pestle to grind the rice evenly until it is smashed, smooth, and has a sticky consistency.

  • Mixing the Ingredients

    After grinding the white rice, add to the rice 1 egg yolk, 2 teaspoons of cooking oil, 1/4 teaspoon of salt, 1/2 teaspoon of turmeric powder, 1 teaspoon of chicken powder, and 1 teaspoon of white sugar.

    Mix the ingredients evenly with the mixture until it forms a uniform mass, taking on a beautiful bright yellow color, with the mixture being smooth and evenly infused with seasonings.

  • Flattening and Shaping

    Use a rolling pin to flatten the rice mixture into a thin sheet, about 0.5cm thick. Use a mold or cup to cut the mixture into small pieces. Repeat this until all the rice mixture is used up.

    Place the shaped cakes on a baking tray, sprinkle a little black sesame on top for an attractive appearance, and the cakes will have a better aroma after baking.

    Note: Do not flatten the rice mixture too thinly; cakes that are too thin after baking will easily break and not taste good.

Tips for Successful Execution

  • You can divide the rice mixture into small balls when shaping the cake. You can also use molds of any shape to create the cake.
  • After the baking time is up, it’s advisable to leave the cake in the oven for an additional 2 – 3 minutes to take advantage of the residual heat in the oven to dry the cake faster.
  • To help the rice cake stay crispy longer, after rolling the cake, you should sun-dry it in a clean, dry, and ventilated place.
  • To enhance the flavor and give the cake a nicer color, you can brush the surface with a mixture of egg yolk and honey in a 2:1 ratio.
  • For longer storage, you should place the cake in a small jar, seal it, and store it in the refrigerator. With good storage conditions, the cake can last for 30 days without spoiling!
