- When selecting shrimp, you should choose those that are fresh with a translucent shell that still has a slight sea smell, not a fishy odor. Avoid shrimp that have dark spots or uneven colors.
- Fresh shrimp typically have their tails neatly curled together. If the shrimp’s tail is spread out, it may have been injected with chemicals or water to make it appear plump.
Tips for Choosing Good Pork Belly
- You should select thin-skinned pork with white fat, plenty of meat, choose pigs of medium size, not large ones, opt for crispy fat, and avoid fat with lumps. Healthy pork usually has a light pink to dark red color.
- Choose firm meat with even muscle fibers, not mushy, with good elasticity, no leaking juices, or sliminess. When you press your finger into the meat, it should create an indentation but not leave a mark when you lift your finger away.

Prepare the Shrimp
Wash the shrimp, cut along the back to remove the black vein, then boil the shrimp in hot water for about 5 – 7 minutes until cooked. Take the shrimp out and place them in cold water, then remove and drain, and peel the shrimp completely.

Pork belly is washed clean, when boiling the meat, add a little salt, after the meat is cooked, take it out and cut it into small pieces for eating.

Prepare other ingredients
Lotus stems are washed clean, cut into pieces, sliced thinly, soaked in water mixed with a little vinegar and alum for about 15 minutes. Then rinse with cold water and drain.
Carrots are washed, peeled, and cut into strips, onions are washed and sliced into thin strips, cilantro is cut into pieces, and Vietnamese coriander is chopped small.
Heat a pan on the stove over low heat, add a little salt, and put peanuts in the pan to roast until cooked. Then peel the peanuts.
