Preparation of ingredients
Cut off the stem of the eggplant, wash it clean, then slice it into long thin pieces and soak in diluted salt water for about 5 – 10 minutes. After that, drain and rinse thoroughly.
Next, soak the dried wood ear mushrooms in water for about 1 – 2 hours until they soften, then drain and rinse several times with cold water until clean, then let them dry. Afterward, chop the wood ear mushrooms finely.
Wash the tomatoes and onions, then dice them. Wash the scallions and shallots, then chop them finely.

Make the accompanying sauce
You heat a pan on the stove, add 1 tablespoon of olive oil and heat it up. Then, add onions, green onions, tomatoes, and mushrooms and stir-fry until fragrant.
Next, season the pan with 1 teaspoon of vegetarian oyster sauce, 1 teaspoon of vegetarian seasoning, 1 teaspoon of sugar, and a little ground pepper, then stir well for the spices to combine.

You preheat the air fryer to 160 degrees Celsius for 10 minutes.
Next, layer 1 layer of eggplant followed by 1 layer of sauce in a glass container, repeating this step until all eggplant and sauce are used up.
Then, add 1 layer of vegan cheese and 1 tablespoon of olive oil on top, then place it in the oven and bake at 160 degrees Celsius for 45 minutes.
