Eggplant 1 piece Dried mushrooms 1 piece (large type) Tomato 1 piece Green onions 2 stalks Onion 1/2 bulb Leek 1/2 stalk Vegetarian oyster sauce 1 teaspoon Vegan cheese a small amount Vegetarian seasoning 1 teaspoon Olive oil 2 tablespoons Common spices a small amount (Salt/ sugar/ ground pepper)

  • Ms. Quỳnh Phạm has used the AVA AF358T air fryer with a power of 1400W to make vegetarian stuffed eggplant. The pot has a capacity of 4 liters, so it can prepare large pieces of chicken under 1 kg or 4 – 5 thighs.
  • The pot uses Rapid Air technology combined with convection air for the ability to circulate hot air throughout the pot, helping food cook quickly and reducing excess fat by up to 80%.
  • The pot has 7 pre-set functions, and users can easily adjust them through the touch control panel.

  • If the eggplant feels hard and the color turns light purple, it indicates that it is overripe and should not be chosen. Overripe eggplants contain many seeds and reduce the quality of the dish.

  • You should prioritize choosing mushrooms that have large, thick ears and stems with few baby mushrooms.
  • Delicious wood ear mushrooms are dark amber in color, with a slightly shiny top and a coffee milk color on the underside.
  • You should avoid choosing mushrooms that are too dark, as they may become mushy when soaked in water and are less crispy, making the dish less tasty.

How to prepare Vegetarian Baked Eggplant using an air fryer

  • Preparation of ingredients

    Cut off the stem of the eggplant, wash it clean, then slice it into long thin pieces and soak in diluted salt water for about 5 – 10 minutes. After that, drain and rinse thoroughly.

    Next, soak the dried wood ear mushrooms in water for about 1 – 2 hours until they soften, then drain and rinse several times with cold water until clean, then let them dry. Afterward, chop the wood ear mushrooms finely.

    Wash the tomatoes and onions, then dice them. Wash the scallions and shallots, then chop them finely.

  • Make the accompanying sauce

    You heat a pan on the stove, add 1 tablespoon of olive oil and heat it up. Then, add onions, green onions, tomatoes, and mushrooms and stir-fry until fragrant.

    Next, season the pan with 1 teaspoon of vegetarian oyster sauce, 1 teaspoon of vegetarian seasoning, 1 teaspoon of sugar, and a little ground pepper, then stir well for the spices to combine.

    Then add enough water to cover the ingredients and cook on medium heat until the sauce thickens, then you can taste and adjust the seasoning to your liking before turning off the heat.

    You preheat the air fryer to 160 degrees Celsius for 10 minutes.

    Next, layer 1 layer of eggplant followed by 1 layer of sauce in a glass container, repeating this step until all eggplant and sauce are used up.

    Then, add 1 layer of vegan cheese and 1 tablespoon of olive oil on top, then place it in the oven and bake at 160 degrees Celsius for 45 minutes.
