How to Make Lava Cheesecake

Mix the cream cheese mixture
Add 120g unsalted butter, 150g cream cheese, and 150ml whipping cream into a bowl. Next, place this bowl in a bowl of hot water and stir well until the mixture melts and combines.

Whip the whole eggs
Place a new bowl in the hot water, then add 4 eggs into the bowl and use the mixer at low speed.
Next, gradually add 90g of sugar into the egg bowl and continue to beat until the mixture turns a light yellow color, lifting the whisk should create a flowing ribbon (Ribbon Stage) which indicates it’s ready.

Mixing the cake batter
Divide the egg mixture into 2 parts, putting 1 part into the cream cheese bowl and using a whisk to gently stir.
Next, pour the mixed batter into the remaining egg mixture. Then, sift 90g of flour into the bowl and continue to stir well to combine.

Preheat the oven at 200 degrees Celsius for 15 minutes.
Prepare the baking mold lined with parchment paper, pour the cake batter into it and bake for 15 minutes at 200 degrees Celsius.
