How to make keto rice rolls

Prepare the ingredients
- Soak wood ear mushrooms in water for about 15 minutes to expand.
- Peel the cassava, wash it clean, and cut it into small strips or cubes.
- Clean the green onions and chop them finely.
You can replace the cassava with onions, which will make the filling sweeter when sautéed. -
Chop the meat and other ingredients
- Clean the pork and chop it finely, adding a little chopped green onion for fragrance.
- Wash the wood ear mushrooms again, trim the stems, and chop them finely.
- Then add the wood ear mushrooms to the minced pork bowl, seasoning with about 1 teaspoon of fish sauce, 1 teaspoon of seasoning powder, and 1 teaspoon of pepper; adjust the seasoning to your family’s taste.
- Mix well to allow the mixture to absorb the seasoning.

Sauté the filling
- Place a pan on the stove, turn on high heat, add about 2 tablespoons of cooking oil, sauté the chopped onions until fragrant, then add the meat mixture to the pan and stir-fry until just cooked.
- Add the chopped cassava (or onion) to the pan and stir well until the filling is evenly cooked, then turn off the heat.
Sauté the filling on high heat to prevent the meat and cassava from releasing too much water; stir continuously for the ingredients to cook evenly and absorb the seasoning. Taste the filling, and if it doesn’t suit your palate, add salt, seasoning powder, or sugar for a richer flavor. -
Making the cake wrapper
- Pour 600ml of water into a pot, turn on the high heat, add the jelly powder and a pinch of salt, stirring continuously until the jelly dissolves completely.
- Prepare 2 clean plates to pour the jelly onto.
If you like a richer taste, you can add coconut milk and stir well; this will give the cake wrapper a milky white and creamy color. However, you should still ensure the liquid ratio is 600ml!- Scoop a tablespoon of jelly onto a plate and wait for 1 – 2 minutes for the jelly to set.
You should pour a thin layer of jelly so that it sets quickly and is easier to roll. You should use 2 plates; while waiting for one plate to set, you can roll the other, making the process faster. -
Rolling the cake
- When the jelly has set, place the filling in the center.
- Gently roll the cake so that the jelly wrapper completely encloses the meat filling. The keto rolls are now ready.

Making Fish Sauce
- Mix the sweet and sour fish sauce with the ratio of 2 tablespoons of fish sauce, 2 tablespoons of sugar substitute, 2 tablespoons of lemon juice, and 4 tablespoons of warm water. You can adjust the ingredients according to your taste.
- Stir well until the sugar is completely dissolved, add minced garlic and chili, and stir again to finish.
