How to make Cat’s Tongue Cookies

Place 2 egg whites in a bowl, and use a fork to lightly beat the egg whites.
Next, add 80g of softened unsalted butter into a large bowl. Then, add a little salt to the bowl and use a mixer to beat the mixture until it is smooth.
Once the butter mixture is smooth, gradually sift in the prepared powdered sugar in small portions.
Then, use the mixer to beat the butter-sugar mixture until it turns a creamy white color.
Continue to mix the mixture until all 50g of powdered sugar is incorporated.
Add 1ml of vanilla extract to the butter mixture and continue to mix it together with the mixer.
Next, gradually add the egg whites into the bowl and mix well. Continue this until all the egg whites are used.
Note: You should not add all the egg whites at once, as it can easily cause clumping and make it difficult for the egg whites to blend with the butter.
Divide the flour into 3 parts, then gradually sift the flour into the mixture in the bowl.
Use the mixer to blend the mixture together.
Do the same until all the flour is used. The cookie dough should be smooth and slightly sticky.

Shaping the cake
Put the piping bag into a cup, then add the cake batter mixture into the bag.
Next, place the bag in the refrigerator for 40 minutes to firm up the batter, making it easier to shape the cake.
After 40 minutes, take the bag out and start the cake shaping process. At this point, preheat the oven to 200 degrees Celsius for 10 minutes.
Then, shape the cake into lines about 4 – 5 cm long like cat tongues on the baking tray.
If you don’t have a non-stick tray, you should line it with parchment paper before piping the batter onto it.
When baking, the cake will spread and expand, so you need to leave space between the cakes!

Baking the cake
After preheating the oven, place the baking tray in the middle rack and bake the cake at 200 degrees Celsius.
After 1 – 2 minutes, the cake will soften and spread into super cute cat tongue shapes.
After 12 – 15 minutes, the edges of the cake will turn golden, at which point reduce the temperature to 150 degrees Celsius and bake for another 10 minutes.
