How to choose fresh ingredients
How to choose fresh shrimp
- You should choose shrimp with a transparent shell and a sea smell, not a fishy or rotten smell. Especially, pay attention not to buy shrimp with dark and uneven shell colors.
- If the shrimp shows signs of sliminess, and its body is bent instead of straight, then you should not buy it as the shrimp has died and is no longer fresh.
- Fresh shrimp usually have legs firmly attached to the body, so if you see shrimp with darkened legs that are no longer firmly attached to the body, you absolutely should not buy them.
How to choose fresh squid
- You should choose squid that has bright colors, shiny skin; when pressing on the body, you should feel elasticity and firmness. The squid’s eyes should be clear and not bulging; those are fresh squids.
- You should note not to buy squid that has darkened, spotted colors, uneven skin, whose tentacles can easily detach and have mucus, as those are squid that are not fresh and have been stored for too long.

How to make Korean Pancakes

Prepare the ingredients
Shrimp and squid should be cleaned and cut into bite-sized pieces (squid sliced and shrimp diced).
Tips: At this step, you should cut the squid and shrimp into small pieces so that when frying the pancakes, they become thin and crispy faster than cutting large pieces.Carrots should be shredded thinly, and half of the onion should be cut into small wedges and minced about 1 tablespoon of onion to sauté with the shrimp and squid.
Chives should be washed, drained, and then cut into pieces about 5 – 7 cm long.

Sauté the shrimp and squid filling
Place a pan on the stove with 1 tablespoon of cooking oil, wait for the oil to heat up, then add 1 tablespoon of minced onion and sauté until fragrant. When the onion turns golden, add the shrimp and squid along with 1 tablespoon of seasoning powder to taste, stir-frying on high heat for 5 minutes.

Mix the pancake batter
This recipe uses Hương xưa pancake mix, which contains dried onions, so if you don’t like it, you can strain the mix to remove the onions.
Next, add 2 cups of HÆ°Æ¡ng xÆ°a mix to a bowl, add 2 eggs, 1/2 teaspoon of salt, and 1 cup of cold water, then mix well. Let the batter rest for 30 minutes to allow it to rise.

Make dipping sauce
You put 4 tablespoons of soy sauce, 2 tablespoons of vinegar, 2 tablespoons of sugar, 1 tablespoon of Korean chili sauce, 1 tablespoon of roasted sesame, 1 tablespoon of chopped green onion into a bowl and stir well to complete the dipping sauce.

Fry the pancakes
When the batter has rested, add the carrots, onions, green bell peppers, and the prepared shrimp and squid, mix well for the ingredients to absorb the batter, then fry.
You scoop the vegetables and filling into a ladle and place them in the pan first, then pour the batter evenly over the surface of the pan before turning on the stove at medium heat, cover to let the pancakes cook. When one side is golden and crispy, flip it over to continue frying until it’s crispy, and then it’s done.
