How to make vegetarian pate with tofu

Prepare the ingredients
Toast the almonds, cashews, and walnuts until cooked. If you buy pre-roasted nuts, you can skip this step.
Boil the white tofu (unfried tofu) in boiling water for 10 minutes until cooked. After that, wrap the tofu in a clean cloth and let it sit for at least 1 hour to drain and dry completely.
Once the tofu is drained, mash it with a spoon (not too finely as we will blend it later).
Clean the straw mushrooms, cut off the stems to remove the dirt. Then soak the mushrooms in diluted salt water for at least 15 minutes to clean off any dirt. After that, slice them thinly to prepare for stir-frying.
Cut the green onions by trimming the roots, wash them clean, then slice them into thin rounds.

Stir-fry the mushrooms and blend the mixture
Place a pan on the stove, add 100ml of oil and heat it. Add the green onions and stir-fry until fragrant, then add the straw mushrooms to the pan. Use chopsticks to stir for about 5 minutes, then turn off the heat.
Next, add the ingredients to the blender in the following order: bread – cream – stir-fried mushroom mixture and oil – unsalted butter – mashed tofu – soy sauce – walnuts + cashews + almonds – all remaining spices. Then turn on the blender to puree the mixture.
Note: During blending, you should stir occasionally to ensure the mixture is blended evenly and smoothly!

Steam vegan pate
Prepare two molds and line the bottom of the mold with a layer of plastic wrap. You can also use parchment paper instead of the plastic lining if you prefer. If you don’t have molds, you can use bowls as well.
Pour the mixture into 2/3 of the mold and use the excess plastic wrap to cover the top of the pate mold.
Note: Covering the top of the cake helps prevent steam from dripping onto the pate, which can cause a pitted surface.
Next, place the pate in a steaming basket and steam over medium heat for 30 – 45 minutes.
Note: This steaming time will help the bread in the pate mixture rise evenly.
After steaming, let the pate mold cool completely, then place it in the refrigerator for about 1 day to allow the pate to bond and have a firmer texture.

For chickpeas, white beans, and red beans, you should soak them overnight for at least 8 hours or always for about 30 – 45 minutes to soften the beans. Then, drain the beans.
Clean the oyster mushrooms and button mushrooms, cutting off the stems to remove dirt. Then soak the mushrooms in dilute salt water for at least 15 minutes to clean off any remaining dirt. Use a knife to slice them thinly in preparation for frying.
Peel the potato, soak it in salt water to remove any dirt. Then boil the potato until cooked and cut it into small pieces. For the onion, peel, wash, and slice it thinly for quick frying.

Sauté until cooked
Place a pan on the stove, add 3 tablespoons of oil and heat it. Add the chopped onion and sauté until fragrant, then add the oyster mushrooms and shiitake mushrooms to the pan. Use a spatula to stir-fry for about 5 minutes until the mushrooms are cooked.
Then, add the prepared chickpeas, red beans, and white beans to the pan, continuing to stir for about 1 minute.
