How to choose fresh and delicious pork
- Choose pieces of pork that are pink or light red, with fat that is slightly creamy white. Avoid choosing meat that is too dark or too pale, as it may be old.
- Fresh pork will have the characteristic smell of meat, not foul or unpleasant. Pieces of meat with strange odors or a sour smell are spoiled or not properly stored.
- To know if the meat is fresh, press on the piece of meat, and if it returns to its original shape after you lift your finger, it is fresh and good.

How to cook Braised Pork

Prepare and marinate the meat
First, you need to wash the pork thoroughly, then cut it into small cube-shaped pieces.
Next, you marinate the meat with seasonings including 1 tablespoon of fish sauce, 2 teaspoons of sugar, 1/2 teaspoon of salt, mix well and let it marinate for about 20 minutes in a clay pot.

Add 1 tablespoon of cooking oil and 1 tablespoon of annatto oil into the pot with the meat and mix well. Then, place the pot on the stove and turn the heat to medium.
Wait until the pot starts to boil, then stir well to let the meat absorb the seasonings, cover the pot, and continue to braise on low heat for about 10 minutes.
When the meat is cooked, continue to add 1/2 teaspoon of salt, 1 tablespoon of fish sauce, and 1 teaspoon of sugar into the pot, stir well, and continue to simmer on low heat.
