How to prepare Beef Noodle Soup

Prepare the ingredients
Shallots and garlic should be peeled, washed, and minced.
Lemongrass should be washed, smashed, and cut into pieces about 5 cm long.
Beef should be washed and cut into bite-sized pieces.
Noodle strands should be washed and drained.
Onion should be peeled and cut into wedges.
Carrot should be peeled and cut into pieces.
Herbs and bean sprouts should be washed with water, soaked in diluted salt water for about 10 minutes, then rinsed with clean water and drained in a colander.
Green onions should be washed and chopped.
Fresh coconut should be used to extract the water.

Marinate the beef
Add the beef to a bowl and mix well with half of the minced garlic and shallots, the juice of half a lemon, and one packet of beef stew seasoning. Marinate for 30 minutes.

Cooking beef stew and blanching rice noodles
You add 1 tablespoon of cooking oil to the pot, heat it, then add the remaining chopped onion and garlic along with smashed lemongrass to sauté until fragrant, then add the beef to stir-fry until browned.
You pour fresh coconut water and 1 liter of water into the pot with beef and simmer on low heat for 60 minutes starting from when the water boils. After 60 minutes, you add the carrots, seasoning with 3 teaspoons of seasoning powder, 2 teaspoons of sugar to taste, and simmer for another 30 minutes. Finally, you add the onions and cook for an additional 5 minutes.
You boil a pot of water, blanch the rice noodles for 30 – 45 seconds, then remove them to a clean strainer to drain.

Making chili salt for dipping beef
You take 1 chili pepper, crush it with two teaspoons of coarse salt, then squeeze in the juice of half a lime and stir well.

Final product
You take a suitable amount of rice noodles and put them in a bowl, scoop the beef stew on top, sprinkle with some chopped green onions and serve with bean sprouts, herbs, lime, and chili. Serve with a bowl of chili salt for dipping the beef!
Notes when cooking beef noodle soup
- Fresh coconut water used to cook beef noodle soup will give a sweeter flavor; however, if fresh coconut is not available, you can use plain water instead.
- You can use lean beef, or if you prefer fatty meat, you can use cuts with a bit of fat. Brisket and beef with some tendons will help you create the best beef stew.
- You can also cook it using an pressure cooker, which will help the beef become tender faster and save time.
