Ingredients for Mango Flan For 4 people

Mango 250 gr (1 fruit) Chicken eggs 3 eggs Unsweetened fresh milk 250 ml Condensed milk 190 ml (1/2 can) Corn starch 2 tablespoons Lemon juice 1/4 teaspoon Sugar 4 tablespoons

Tips for choosing good mangoes

  • You should choose mangoes with an even yellow skin, smooth, not rough or with any tiny blemishes on the surface.
  • Pressing should feel firm, not soft and the stem should still be hard and not falling off.
  • Additionally, you can also rely on the aroma to choose. If you smell a pure, gentle fragrance, that is naturally ripe mango; on the contrary, if you smell a strong chemical odor, you definitely should not choose it.

How to make Mango Flan

  • Cooking caramel

    Prepare a pot on the stove with 4 tablespoons of sugar and 4 tablespoons of water, cooking over medium heat for 5 – 7 minutes.

    Once the sugar boils, reduce the heat to low for 5 minutes until it turns a brown color, then turn off the heat and pour into a mold (glass cup) to cool.

    Tip:

    • Avoid burning the caramel and not being able to observe it, so use a pot with a light color, not too dark.
    • If you want the caramel to have a beautiful color when cooking, do not stir at all, just hold the pot handle to gently swirl it. Once the sugar has completely melted, add 1/4 teaspoon of lemon juice.

  • Blend the mango

    Peel the mango and cut the flesh into a bowl. Then, use a spoon to gently mash and press the mango flesh until it becomes smooth, then strain it to extract the juice.

    Prepare a bowl for the mango juice, 3 eggs, 250ml of unsweetened milk, 190ml of condensed milk (1/2 can), and 2 tablespoons of cornstarch, then mix all the ingredients together.

    Tip: To ensure the mixture is well combined, you can use a hand mixer.

  • Pouring the mold and baking flan

    After thoroughly mixing the mixture, pour it into the mold (glass cup) and bake in the oven for 40 minutes at a temperature of 160 degrees Celsius.

    After that, when the cake is cooked, take it out and let it cool for 30 – 60 minutes, then put it in the refrigerator for 1 – 2 hours.

    Tip:

    • If you don’t have an oven, you can replace it with a rice cooker to steam the cake, but the steaming time will be longer.
    • To check if the cake is cooked, you can use a toothpick to test it; if the flan does not stick to the toothpick, it is done.
    • When taking the cake out, to avoid burns, you should use specialized oven gloves.

    The mango flan comes out with an incredibly appealing first look. Tips to make Flan without holes

  • To prevent the flan from having holes while baking, you should place a towel under the cup base and use thick glass cups. Additionally, bake in the middle rack to avoid excessive heat exposure.
  • Moreover, when mixing the mixture, you should stir gently to avoid creating air bubbles and stir in one consistent direction.
  • Before pouring into molds, you should use a sieve to filter the mixture to eliminate any undissolved egg whites and yolks.

How to Store Flan

  • For flan that hasn’t been fully used, you can place it in the refrigerator and consume it within 5 – 7 days.
  • When storing in the refrigerator, to avoid the flan absorbing odors, absolutely do not place it near fresh seafood items like fish, meat, etc.
